15.01.2022 Hippocrates famous quote of ‘all disease begins in the gut’ continues to ring true as science has shown us the importance of gastrointestinal health, and as the root cause of many other health problems in the body. Our microbiome or inner ecosystem is now the target of much more research in the field. The gut is often referred to as the second brain, due to the fact that it shares very similar neurotransmitters to the brain. It’s important that we nurture the good bacteria in... our gut, as that will help crowd out the harmful bacteria which cause an imbalance and can result in dysbiosis. This is when the smooth lining of the GI tract becomes permeable and by allowing food proteins to enter the bloodstream, it activates the immune system which then causes inflammation. This can then lead to food sensitivities, malabsorption of vitamins and minerals, an inability to eliminate toxins, dysregulation of hormones and more obvious symptoms such as abdominal pain and bloating after meals as well as reflux. Apart from being responsible for our digestive and immune systems, the beneficial bacteria in our gut or lack thereof, can also influence our mental state with anxiety and depression, or create foggy thinking or memory problems. Fermented foods are eaten all over the world as part of traditional diets, and are powerhouses of probiotic nutrition. When we ferment or culture a food, the nutritional benefit is increased one hundred fold, and it becomes more bioavailable to the body. The bacteria predigest the food for us and break it down, so we can assimilate it more easily. The most common example of a fermented food is yoghurt, where a starter culture is added to milk. The good bacteria get to work and replicate and eat the sugars (lactose) which turns the milk sour. This is why fermented foods always taste tangy, as the bacteria use the sugars naturally found in the foods being cultured, as food for themselves. The culturing process significantly increases the levels of enzymes, organic acids, B complex vitamins, Vitamin C and Vitamin K. Adding a small amount of sauerkraut with each meal helps you to better digest and absorb the nutrients in your food. Fermented foods also strengthen the immune system and help eliminate toxins, reduce bloating and constipation and can control cravings, especially for sweet foods. The addition of foods and drinks rich in friendly lactobacilli bacteria and lactic acids can prevent or eliminate the growth of unfriendly bacteria or yeasts in the gut. As 80% of our immune system is housed in the gut it makes sense that an excess of pathogenic bacteria is now linked to many chronic diseases. When made correctly they are extremely safe. I always recommend that a starter culture is used as this will drop the pH quickly in the first 24 hours so that no moulds or other pathogens can grow. 14.01.2022 My mother has made these Greek Christmas Honey Macaroons (known as Melomakarona in Greek) for as long as I can remember and they’re my absolute favourite! It’s just not Christmas without them. Now it’s my turn They have their roots in Byzantine times and evolved from a piece of bread offered after funerals to honour the dead. These egg shaped macaroons were shared as early as 430BC to commemorate the first dead of the Peloponnesian war. These days they are more commonly eat...en during the 12 days of Christmas. As they are an authentic traditional treat, they are made with olive oil, oranges, walnuts, honey, cinnamon and cloves so are also antioxidant rich, dairy free, egg free and vegan too! They do contain flour and sugar but the fats in the olive oil balance the sweetness really well. Some recipes purporting to be traditional use vegetable/seed oils so beware of those as they are neither authentic or healthy! My macaroons are juicy and gooey, melt in your mouth, dripping in honey, crunchy with walnuts and totally addictive! 12.01.2022 Wibble wobble wibble wobble jelly on a plate! Who remembers growing up when jelly and ice cream was common and was the food du jour given in hospital after you had your tonsils out? The sun finally came out today after 2 weeks of miserable rain and a jelly and ice cream dessert served with a fruit salad (created with easy to digest nutrient dense sugars) made a welcome appearance after lunch. I made my jelly today by using a mix of raspberry and blackcurrant juice and adding ...some extra frozen raspberries, but you can pretty much use any fruit juice combination you like. Orange and lemon juice works well as does watermelon, raspberry, orange and lemon or watermelon, apple, strawberry and mint. By adding grassfed beef gelatin to the juice you create an extra hit of nutrition to fight inflammation, protect the thyroid, reduce cortisol and boost your metabolism. The gelatin is also a great source of protein so can assist with blood sugar issues (as do the raspberries) and helps to heal your gut lining. Gelatin can also improve skin and hair as well as support your immune system. Because it contains glycine it can assist with sleep issues as well. It's important that you use a gelatin powder that is grass-fed or organic; not the toxic, chemical laden gelatin you can buy at the supermarket. To get the real health benefits, the gelatin should come from animals that have been pasture-raised and not treated with antibiotics or steroids and it should not contain any other additives after processing. 11.01.2022 Growing up in a Greek Australian household, I always looked forward to helping my Mum make all the traditional Greek sweets served at Christmas time. One of her specialities is a sugar dusted shortbread biscuit known as Kourabiethes in Greek, which as a child, reminded me of snowy mountain peaks. They are melt in your mouth buttery and crumbly at the same time, with just the right amount of softly scented sweetness. It is thought these biscuits originated in 7th century Persi...a after sugar became more readily available. This filtered through to Asia Minor and I suspect the crescent shape grew in popularity in Greece during the Turkish occupation. Many variations of this biscuit exist throughout the many regions of Greece, but were traditionally prepared with rose or orange blossom water and with butter made from sheep’s milk. My parents hail from the south coast of Greece, from Kalamata in the Peloponnese and as such, our version omits the almonds, and uses ouzo as the flavouring along with vanilla and rosewater. I’ve also created a gluten free version for you with cultured butter, coconut sugar and a mix of gluten free flours. I’ve used mastiha as a flavouring instead of ouzo as it has a similar subtle anise profile. Mastiha is a resin produced by the Mastiha tree which only grows on the island of Chios and is known for its food as medicine qualities. It is often used to treat helicobacter pylori which can cause stomach ulcers, and as a general digestive aid and relief from heartburn. If you can tolerate gluten then I highly recommend you make my Mum’s version as they are truly the best! Enjoy! 08.01.2022 You may know this old fashioned treat as a Hedgehog Slice but its derived from the Chocolate Salami recipe invented at the beginning of the 20th century. If youre German it would be called Cold Dog, Cold Snout or even Cellar Cake; Biscuit Cake in the Mediterranean and more specifically Mosaic in Greece. My Chocolate and Coconut Mosaic is one of those recipes that is quick and easy to put together at the last minute as long as you allow time for it to set in the fridge. Usually a favourite this time of the year for school fetes and fairs Interestingly some of the most googled recipes during lockdown contained condensed milk which is made by cooking down, milk, sugar and baking soda. Never having cooked with it before I was curious to try the coconut milk version made by @naturescharm as well as the new gluten free @ceresorganicsau Coconut Wafer Rolls and it didnt disappoint! 05.01.2022 My Happy New Year Cake is something that I serve every New Year’s Eve or New Year’s Day. Traditionally in Greek homes it’s made from a brioche type dough and called Saint Basil’s Cake (Vasilopita in Greek). Saint Basil is the Greek version of Santa Claus. Over the years however the recipe has been adapted throughout various regions of Greece from a bread into more of a cake and this is my interpretation of the version I grew up with. A coin is inserted in the cake and whoev...er is lucky enough to find the coin in their slice is said to be lucky for the coming year! Slices are given out by the head of the household in order from oldest to youngest. It’s a lovely, light, lemon scented and moist cake due to the addition of yoghurt and taking the extra time to separate the eggs rather than adding them whole. I’ve also added some raisins this time for a bit of variety. Given the year that was 2020 perhaps I should have added some extra coins for good measure! Happy New Year! Enjoy!
