24.01.2022 MY COFFEE TREES Part 3 I finally found some time and decided to roast the beans I had dried. You all might think I would just use my roaster? Wrong! The quantity is too small and they would simply get electrocuted, so to speak and lost in the drum. So, I decided to use a wok instead. Even with the wok, it is hard to get uniformity on all the beans, as they were of all different sizes.... This is typical of hand roasting as it is still done in many countries and communities, and creates a more interesting cup when brewed. There are light, medium and very dark beans all mixed together which all add interest. After roasting, I tasted them, and surprisingly, they are sweet, have an almost pop corn flavour and I could sit in front of the TV and just eat them, but decided against it or there would be nothing to brew Here are some photos, and in the next episode...the Brew! Am going to compare caffettiere, plunger, and ibrik. Hope I have enough coffee!



23.01.2022 Opening hours. Opening times have changed so customers can pop in for a morning coffee or buy a bag of coffee for work or home. Open every morning from 7.30 to about 10.30 and Saturday from 8.30 till afternoon sometimes late if I am doing a large roast.... Espresso is $2.00 Cappuccino/white $2.50. Buy a bag and you get a free coffee. Can taste different varities. Also , plunger, Turkish or Brazilian styles. Buy 9 of the same thing on a loyalty card and the 10th is free. The caffeine dealer.

23.01.2022 Loyalty cards . Starting from Saturday 26 October, we are starting our loyalty program. Anyone coming to our factory counter in o' Connor to purchase a bag of coffee or sample a coffee can join our loyalty program card. Every time they come to purchase a bag of the same quantity, will count towards a free bag.... Buy 9 bags, and the 10th is for free if 9 bags are purchased within 12 months. As they say, the best things in life are free, but we have to pay to get them!

22.01.2022 My coffee trees! After nearly 4 years of nursing my coffee trees, they have finally decided to yield some seeds, or beans as they are commonly known :) In the last few weeks with the weather warming up they have started to turn bright red.... So its time to pick them. My cherries will be unwashed as I will remove the seeds one by one from the pulp. Stay tuned, as later when ready I will let you know how they taste. The core plant is an Ethiopian variety with a different species grafted onto it, to suit the Australian plantations between Qld and NSW. Best way to roast them will be by hand, in a pan Ethiopian style and simply brewed. Only coffee drinkers are invited. No milk drinkers please:)



21.01.2022 Organic coffee. We have added 2 more organic coffees to the Papua Keromine. Now there is also Mexican Chiapas, from the South East near Guatemala, and Peruvian Alto Palomar from the Western side of the Andes. Roasted medium dark, they are well suited to stove top, ( caffettiera) plungers and traditional brewing methods. Mexican brewed with some cinnamon, or aniseeds the traditional way is just great.... 18.01.2022 My coffee trees. Part 2. For those that followed part 1 of my coffee trees, here is the sequel. After picking the cherries, I decided to take the seeds out for drying, rather than dry them in the cherries. Surprisingly, i would say that about 10% were no good.... They have since been dried and the parchment skin removed with a blender, leaving quite small seeds. They are now ready to roast! But that is for the next episode. See more

15.01.2022 My coffee trees. The brewing. I finally managed to taste 4 years of patient waiting. I decided to try the beans in 3 different ways, caffetiera, Turkish style and French plunger. Some might say why did you not try it in the espresso machine? Well..A real Italian espresso cannot work with a single bean variety. It is a minimum blend of 3 to be able to reach a balance. I will not go into this topic as many coffee drinkers in Australia prefer coffee flavoured milk which to som...e cultures is not drinking coffee. The first brew was caffetiera, and surprisingly I found quite pleasant. Tasted of light chocolate and lightly toasted nuts. Very low acidity , no citrus or other hints at fruit flavours such as Ethiopians, and Colombians. Out of 10? I give it a 7. TURKISH STYLE did not go very well. The grind was too course and the beans flavour I found too delicate for a good Turkish or Greek style brew. Even with adding cardamon as I like it, it did not score well with me. Out of 10? I gave it a 3. FRENCH PRESS OR PLUNGER. This method produced an acceptable result. A little light in flavour which could do with experimentation of portion size, but overall not bad, and did not leave me wanting another coffee once drank. Out of 10? I give it a 6. That's all for now folks.



12.01.2022 Our new premises in Fremantle are finally ready for public sales. It's been a lot of work migrating from Bullsbrook in the Swan Valley and getting the new place ready, in O'Connor but we now have dedicated retail section to buy freshly roasted bags, or smaller quantities to try both whole or ground on the spot. We can also offer tastings of commercial espresso, stove top ( caffetiera) or plunger style, traditional brewing, Turkish , filter or whichever way you drink it. ... Starting soon we will be opening for public sales Saturday's, but extend open days as we feel is needed. Of course as always a phone call to me, Tony and I can arrange a pick up, drop off or delivery. For the customers in Bullsbrook who used to drop by regularly, I would like to thank for dropping by and even driving miles to come collect their caffeine fix. I really appreciate your support. 03.01.2022 Stove top caffetiere For those who like stove top coffee, and yes, thats all you Italians , we now stock Bialetti , the classic aluminium model and also limited stainless range. I tried the induction model recently and is a gem. We also have spare gasket kits.... For those who have never used a classic Italian stove top, pop in on a saturday and I can show you how it works. This still remains a favourite in millions of households throughout the word!
