14.01.2022 Congratulations to Tasmania’s Adams Distillery, Glen Ireh Estate, Perth Tasmania on their single malt whisky’s win of Australian Whisky of the Year Award through Jim Murray’s Whisky Bible 2021. Adam Pinkard, CEO and Chairman said our win was totally unexpected and a surprise, but it is a validation on our experimental whisky making. The winning single malt whisky is a heavy whisky with caramel, toffee and chocolate notes that are present due to the whisky’s direct fire ga...s burners and a process of only half filling barrels and then flipping them which exposes the whisky to the wood twice imbuing a deep, rich, char flavour. Another part of Adams Distillery’s experimental approach was their input into the still shape. Stills were manufactured by local manufacturer Stillsmiths. Pinkard says We worked closely with Stillsmiths, we wanted short, fat stills, squat in shape. Which have produced a whisky that is oily, full of flavour with a big mouthfeel, just what we were after.
