Remember my kombucha is unpasteurised, home brewed using natural, mostly organic ingredients (organic tea and organic raw sugar) with whole fruits. No additives or added sugars, no extracts, just all natural! If you’re wondering what flavours to choose from, depending on your palate, the sweeter the fruit (mango, strawberry etc) the sweeter you’re kombucha will be, however if you’re after a more tangy, low sugar tasting kombucha stick to tart/low sugar fruit flavours (ginger, blueberry, raspberry, lemon, lime).

13.01.2022 POMEGRANATE - who else is obsessed with pomegranate This summer I have discovered an addiction for this delightful summer fruit- in salads, paired with other fruit, on there own and now in kombucha!! They are rich in micronutrients like vitamin C and potassium and is a powerful antioxidant. They have the taste of summer - juicy, the right balance of sweet and sour and are super refreshing. As quickly as I discovered my love for pomegranate I soon realised that they are ...now going out of season and are hard to find in my local fruit and veg stores. I bought the last 4 the shop had left so I can enjoy a few more pomegranate salads and will use some on my 1st batch of kombucha. If you want to try pomegranate kombucha, get in quick (limited bottles will be available) as unfortunately this will be my only batch with pomegranate until next summer (unless I can magically find them again). Bottles of Kombucha are $12 each but for my 1st batch I’ll be announcing my introductory offer shortly!

05.01.2022 When brewing kombucha there is no magical instrument to tell you it’s ready. Kombucha brewing is a sensory experience, we need to trust all our senses when understanding kombucha. Here’s what to expect: -Smell: The smell is the biggest give away to knowing kombucha is fermenting nicely. The aroma should have a slightly sweet, sharp tang (kind of like vinegar but not so strong). -Taste: It’s important to taste kombucha from 7 days on and you should expect it to have a slightly... sweet and a slightly tart complexion. -Sight: A baby SCOBY has formed and is a creamy, white colour. Yeast strands are often hanging from the SCOBY. The fermented tea has lightened in colour and bubbles are seen beneath the surface of the culture. -Touch: The SCOBY feels smooth and has a soft rubber feel. -Sound: Sometimes you can hear the sounds of the bubbles popping indicating a great brew! As a studying nutritionist, a mum of two boys, and a lover of total health and well-being, my free time usually consists of researching about whole foods and nutrition and finding cutting edge natural and healing health benefits that I can adopt into our lives. One year ago, I stumbled across the endless health benefits of kombucha and decided to try brewing it myself in hope it would ...be another good healthy choice my family can love. One year later I have seen the wonderful health benefits it has provided for my family and I really want to share the love and knowledge I have for kombucha with you too. I can supply homemade 1 litre bottles of kombucha (a probiotic and enzyme fermented tea using live cultures to help support gut health). My kombucha is naturally brewed with our unique blend resulting in a crisp, tangy, slightly sweet, fruit infused kombucha! 04.01.2022 Let’s talk ~SUGAR~ in kombucha. Probably my most interesting topic when it comes to brewing kombucha. When I started making kombucha i was at first quite shocked at the amount of sugar required for this healthy gut-healing beverage! I questioned how this fermented drink could possibly be as healthy as claimed when I felt I’d be consuming a decent amount of sugar. The great news is the sugar in kombucha is merely a staple ingredient in providing food for the culture and in ret...urn provides us with good acetic acids and enzymes. So let me explain- during the process, the fermentation begins breaking down the sugar (sucrose) into glucose which in return provides food for the yeast and by doing so converts the sugar into ethanol (alcohol). Given that there is more bacteria to yeast ratio, the bacteria feeds on the ethanol converting most the ethanol into acids, giving kombucha it’s sour, vinegar taste and leaving small amounts of sugar present in the final beverage. Various factors including temperature, length of time, the amount of starter liquid etc when fermenting kombucha can impact the amount of sugar left over. Sugar is a necessary food for the survival of the scoby, without it the culture can not create a new scoby and convert the tea into the beneficial acids, vitamins and enzymes for your booch! There’s no escaping refined cane sugar in kombucha, in my experience though I’ve chosen to brew with raw, organic sugar as it’s been processed enough for the micro organisms to break down and consume easily but adds some benefits such as magnesium, potassium and iron to your kombucha and by choosing organic it limits toxins! I use the minimum requirement of sugar to tea ratio (this has always worked well for my kombucha) and and I brew my batches for a lengthy period of time, all these factors contribute to a low sugar gut healing beverage.

04.01.2022 Mango!!! The ‘king of summer fruits’ when it comes to flavour and health benefits. Mango is a great source of fibre and high in antioxidants. This fruit is rich in over 20 vitamins and minerals such as vitamins A,C,E and B6 and minerals like potassium and magnesium just to name a few. Studies have shown mango can help reduce blood sugars, boost immunity and brain cognition, have anti aging properties (result of vitamin A and C content found in mango) and lower blood pressure ...and cholesterol. How lucky am I having a father in law who has 2 beautiful mango trees and provides these gorgeous ripe naturally grown mangoes! Since I have quite a few on hand, making mango kombucha is a must! If you haven’t tried my mango infused kombucha it is absolutely delicious, still tangy and not too sweet, but delivering a delightful tropical experience for your tastebuds!

03.01.2022 Let’s talk ~KOMBUCHA~ Although kombucha has recently become a fast growing health trend these last few years, kombucha has been around since ancient times and served as an important role to the health of our ancestors. In order for us to understand why this fermented tea was once an essential tradition we need to understand the symbiotic relationship it has between microorganisms such as bacteria and humans. Bacteria often gets a bad name for itself, we often associate bacte...ria with a negative impact it has on our bodies like infections/sicknesses etc, however millions of bacteria covers every surface on this earth including our skin as well as our internal surface. We should embrace bacteria more as our friends than enemies because without bacteria we simply cannot survive plus there is a lot more good bacteria than there is bad. So it makes sense to consume beneficial bacteria through fermented foods/drinks to help support the function and wellbeing of our mind and body. Kombucha is a fermented drink made from various sources of tea: when particular foods and drinks are fermented like kombucha, they become rich in probiotics!! The magical part of consuming kombucha is that it boosts our immune system, our pH becomes alkalizing, it aids in digestion and nutrient absorption, the enzymes in kombucha helps break down proteins into amino acids and helps with mental support. Kombucha is made up of primarily black, white and/or green teas and sugar. A scoby (symbiotic colony of bacteria and yeast) and starter liquid, along with filtered water is added to the sweet tea and undergoes a fermentation process that lasts from 7-14 days and possibly longer. This is known as the first fermentation. Once the tea has a slightly tangy/vinegar taste but still slightly sweet (remember the longer you brew the more sugar has been converted to acids. I will talk about the sugar component in another post later!) the kombucha is ready to drink as is, however often it undergoes a second fermentation where kombucha is bottled and fruit of your choice is added resulting in a fruit infused, naturally carbonated kombucha!!

01.01.2022 Bubbles for days! It is always exciting seeing fizzy kombucha gushing out of the bottle like a never ending eruption! It’s amazing that this subtle, fizzy tasting beverage is naturally carbonated and the effervescent drink is a result of the presence of yeast strands consuming sugar from the fruits in the 2nd ferment and creating carbon dioxide in an anaerobic environment.
