20.01.2022 @madmadz93 dropped by Koolies Nose HQ with Frankie so we could meet him. Frankie was recently sprung from a rural pound, thanks to a mate, and landed on his paws into Maddie's hands. He will now start basic traning and move onto #truffledogtraining. 19.01.2022 Feeling very spoiled. A delivery of @mainridgetruffles hand made Truffle Gnocchi arrived today. So I played...fried some bacon, home made passata, cream, @redhilltruffles truffle butter, parmigiano reggio, and a few veg for good measure added gnocchi and chucked in a slow oven till hot.....Thank you Mr Pino @mainridgetruffles truffle dog and Miss Kyra @kooliesnose for sniffing out the main ingredient. Shame @madmadz93 couldnt be here to try this after her hard work with Kyra.

Miss Maddie also learning from one of the most experienced farmers, IMO, Miss Jennifer @redhilltruffles. K9 Maddie @redhilltruffles and I have been training as well as sharing my dog training knowledge with Jennifer and this has seen K9 Maddie grow into a fine hunter with a huge future ahead of her.

02.01.2022 3 years ago my mate made this prototype for me from a drawing I did..the years I spent working in the rail industry this railspike was a very special make for me. Now days they are made for us from stainless steel, I still use this one.......THANKS DARREN. ******* This is a special piece, hand forged then ground. Truffle digging tool made from a railway spike with cypress handle so it can stand up to the cleaning require between farms. Lessons learned hand forging is possibl...e with left hand and grinding the resultant piece flat with my undersized jerry rigged belt grinder is also possible. Both tasks can best be described as character building though. Non edged blade with a 4 direction convex grind tricky but a beautiful finish that I proud to pass on to the first recipient of one of my blades.......Photos and description courtesy Darren Simester See more
