25.01.2022 Doesn’t 2020 feel like the shortest & longest year, all at the same time? 21.01.2022 First week of school is almost over . Packing lunchboxes is one of my least favourite parts of the back to school grind . I used to spend hours scouting supermarket shelves trying to find snacks that weren’t full of hidden sugar & artificial ingredients .... Once I started making my own snacks during my one hour of meal prep each week, it alleviated this stress greatly . 12.01.2022 Overwhelm & burnout . As the year draws to a close I am hearing more & more about how exhausted & burnt out many of us women are . I too, was suffering from this a few weeks ago & wanted to share my top tips for how I managed this .... I know this isn’t news to most of you, but sometimes all we need is a reminder . My top tips to managing burnout/exhaustion: Saying no: it is ok to say no. Practice saying it in the mirror if you aren’t used to saying it. Lots of sleep . I cleared my calendar for a few days & had naps/just did the essentials. Whatever lights you up - go do that. I used all my emotional support & energetic support essential oils to help support my body. Eat really well: I avoid sugar, alcohol & cut coffee right back. I also increase all my supplements like having double shots of my Ningxia red . Take shortcuts & don’t beat yourself up for it: something has to give when we are exhausted. Find where those shortcuts can be taken & either outsource them or go shopping for them . I’d love to know, do you have any other tips to add?

08.01.2022 Not the prettiest pic I know, but bear with me . This is the ultimate quick, healthy comfort meal you’re ever going to make, so save it for later . Pesto low carb Fettuccine Ingredients (serves 2)... 1 pack @slendier fettuccine (I got mine from @woolworths_au), 1 clove of garlic, 1 zucchini - spiralised, 1/2 punnet cherry tomatoes, 1/2 jar of pesto (I buy homemade from Rosa @palmyrafarmersmarket), Fresh rocket, 1/2 a lemon, Parmesan to serve, Optional for extra protein: 1 chicken breast or some shredded roast chicken . Method - Cook the according to the directions on the pack, - sauté garlic in a splash of EVOO, - add your pesto & stir to combine, - throw in the remaining ingredients & stir to heat, - add your noodles to heat through, - squeeze over your lemon, add more salt to taste & serve with fresh Parmesan . 08.01.2022 Dessert or breakfast..you decide . Yesterday I made my all time favourite lemongrass, coconut & mango chia pudding at our oily community Christmas get together. This is one of those dishes that literally takes minutes to make, and looks super impressive, when topped with some granola (see my previous post for that recipe ). Eat it for breakfast, dessert or anything in between . ... MANGO, COCONUT AND LEMONGRASS COCONUT PUDDING Ingredients (serves 2): 1 Cup of TCC or Ayam Coconut Milk 3 TBSP of Organic White Chia Seeds 1 TBSP of Organic Maple Syrup 50g of fresh Mango diced or Pineapple 2 Kaffir lime leaf shredded 1 tiny drop of Young Living Lemongrass Essential oil Method: In a 250ml jar or bowl, mix Coconut Milk, maple syrup & lemongrass oil. Add Chia seeds & mix really well until the chia seeds start to swell & have soaked up the liquid. You can place in the fridge to speed this up, although this step will not take long if you keep mixing/shaking. Dice your Mango into cubes & set aside. Chiffonade or finely shred your kaffir lime leaf & set aside. Once chia seeds have swollen & most of the liquid has been absorbed, gently place the mango on top of the chia pudding. Scatter the shredded Kaffir lime leaf over the top. Enjoy immediately or place the lid on the jar & enjoy later. If you are not eating immediately, leave the mango off the top until you are ready to eat the pudding.
