10.01.2022 ONE RECIPE- 4 WAYS Because the children like something one day and over it the next My go to banana bread recipe turned into- ... 1 banana bread loaf 1 batch of berry muffins 6 mini choc donuts 6 mini choc muffins (Double the recipe to make this amount). What you need: 1/3 cup coconut oil, melted 1/3 cup honey/ maple 2 organic eggs 2 large over ripe bananas 1/4 cup seeds of choice (hemp, chia, flax etc) 3/4 c whole meal spelt flour (or GF) 3/4 c almond meal 3/4 c des coconut (preservative free) 2 tspn vanilla 1 tspn baking powder Pinch salt MIX INS- berries, vegan choc drops etc. How it’s done: preheat oven 180c mix coconut oil, honey, eggs. add banana and blend or mash. pop some hot water with your baking powder then add to bowl. add all other ingredients and mix/ blend well. separate your mix into desired pans/ cases etc. pop on your berries, choc etc. bake the loaf for 30/40mins and the others for 10/15mins. Keep an eye out. cool and devour.
