22.01.2022 ...a bit of tea info from the Courier Mail's David Costello (2012) Different processing methods produce six distinct teas. WHITE: Harvested leaves are withered and dried using warm air.... GREEN: Leaves are withered and then heat-treated. In China, the tea is pan-roasted while in Japan it is steamed. YELLOW: This is a rare variety. Processing is similar to green tea but it has a slower drying phase with leaves allowed to sit and turn yellow. BLACK: Leaves are withered, then rolled and crushed to release enzymes which turn black through oxidisation. They are then dried. OOLONG: The tea is partially oxidised, producing a tea that is somewhere between green and black. PU'ER: Leaves from the assamica variety are wok-roasted, dried, then lightly steamed and pressed into discs or bricks. Fermentation and ageing produce complex flavours.

01.01.2022 I usually don't have sugar with my tea (unless it's Indian Chai)....today I found coconut blossom sugar at the supermarket and decided I would experiment a bit So I made a bottle of ice tea to keep cold and on hand with High Tea with Harriet's "Fields of Gold" blend....what more can I say - so refreshing and revitalizing!
