13.01.2022 What is Chimichurri? This flavorsome and delicious green sauce is the perfect condiment to the grilled meat off the Parrilla. The source of it origin is still unkown and still raises debate over the dinner table between Argentinians and the people of Paraguay who created this famous sauce, but as chimichurri lovers we thank both just in case. The Argentine gourmet Miguel Brascó claims that the word chimichurri originated when the British were captured after the British invasi...ons of the Rio del la Plata. The prisoners asked for condiments for their food mixing English, aboriginal and Spanish words. According to this story, che-mi-curry stands for "che mi salsa" (a rough translation is hey give me condiment or give me curry). The word then corrupted to chimichurri. Chimichurri is a garlic and parsley based sauce covered in olive oil but just like all good sauces the variation changes from family to family with everyone having their own secret recipe adding such ingredients like paprika or oregano, and yes we have our secret one as well!
