02.01.2022 Do you sometimes think back to your childhood? Do some things trigger your memories of growing up? For me, the seasons take me back to my grandparents where the cold winter months meant it was time to make homemade salami, pork sausages, flat pancetta and coppa (ie capo collo). My grandfather’s speciality was his pancetta . He would be there salting, weighing the meats with bricks to extract as much liquid out before seasoning, rolling and tying it up tightly ready for hang...ing up in his garage to air dry for a period of time. My father preferred to just leave it flat and add quite a handful of chilli and crack pepper. Growing up in a very traditional Sicilian family, this was the way of life! Summer was for tomato sauce making, autumn was for wine and vino cotto, winter was all things salumi and spring was for sowing seeds for all spring vegetables including the long Sicilian zucchini! Well my grandfather is long gone, and my father is a nursing home. So this year I decided to follow traditions and make our own! I think my grandfather (not my doctor!) would be proud of my pancetta and capo collo. See more
