25.01.2022 Wednesday 16th December 2020 To celebrate, or in so many ways give thanks for, a COVID free WA in 2020 we held a black-tie end of year cocktail party in one of Perth’s most exclusive and exquisite locations. With views into the sunset over the Swan River and our recently completed magnificent, multi-awarded and increasingly iconic OPTUS stadium nearby, almost seventy members and guests were treated to a wonderful finale for what has been a unique year for all. The evening be...gan with a Blanc de Blanc sparkling wine, naturally, in a specially reserved section of the Crystal Lounge, the Executive Lounge with the most expansive views over the Swan and estuary beyond. The early summer weather obliged with clear skies, a balmy breeze and a trademark orange sunset which was observed from our twelfth-floor balcony. Bailli Thurston Saulsman gave a summary of our 2020 events followed by an introduction to special guests and welcomed new and returning members. Committee members were also given a quick opportunity to explain their roles as we look forward to an ever more exciting and creative year ahead. Wines for the night were sponsored and provided by Plantagenet Wines, from Mount Barker and the first vineyard in the Great Southern Wine Region some 400km away. Luke Eckersley explained the composure and history of the wines in much detail. The area is most famous for its Riesling varieties but also Cabernet Sauvignon and Chardonnay are highly prized. Executive Chef Sean Marco then presented and expounded on the ten canapes that had been meticulously created and prepared for the evening, eight of which were savoury in nature with two dessert temptations. Inspiration for a number of these was taken from the exclusive restaurants forming part of the Crown Resort such as the Nobu, Silks and Rockpool Grill restaurants. Our ten extraordinary canapes were: 1. Ocean trout, miso mirin egg yolk and crispy skin 2. Ocean temari, oscietra with organic soy 3. Crisp rice, goose liver, quince and green peach 4. Wagyu short rib, gochujang adobo, fermented cucumber and shallot 5. Fresh scallop taco, yuzu, jalapeno, aji verde 6. Pressed Fremantle octopus, pork belly, black pudding with apple puree 7. WA Rock Lobster netted spring roll sweet and sour sauce 8. Onion tatin, soubise cream with British cheddar 9. Blueberry, rye pastry and white chocolate 10. Coffee, banana and salted caramel club sandwich To complete the evening a special surprise, and demonstration, in the art of Sabrage completed the evening. Performed by Bailli Thurston and accompanied by Vice-Chancelier Sande opened a bottle of champagne on the balcony, completed with a specially acquired Sabrage sword, with flair and gusto admired by all . 20.01.2022 After almost four months since our last event our isolation and COVID free state (No community transmission at all and no deaths for weeks) with few remaining restrictions enabled over 30 members to gather for a soiree at our Balli's home. Food was prepared by Govindha Govardhan (Gogo), our well known friend, and chef-at-large to many of the world's international cricket teams. Our theme was Spanish Fiesta prepared with many magnificent Tapas, wines selected by our Vice-Enchason and Gogo's signature lamb - adored by so many famous cricketers and thus responsible for the energy behind 'a few' wickets. We are hoping to add more events in the near future but our WA state borders are closed and nevertheless we send our Chaine community elsewhere our sincere best wishes in this unique era.

19.01.2022 2021 Competition

19.01.2022 Your committee 'hard at work' planning for a resumption of events once the next stage of lockdown is lifted hopefully in June. Already Western Australia is effectively COVID free with no new cases and no deaths for weeks. Dinner was prepared by Hugh our nominated Chairperson and Vice-Conseiller Cullinaire suitably attired. Our meal was a magnificent Beef Strogonoff and a superb Coq au Vin with Paris Mash and French Beans. Accompanied by a classic 2017 French Pinot Noir, Bourg...ogne which we had also sampled at our Chapitre Gala Dinner, Titantic - A Night to Remember, in December 2019. This was a successor to the wine that had also been served on board the Titanic that fateful night. Our gathering was at the home of our Bailli Thurtston and Sande, Vice-Chancelier. Other committee members, still practicing social distancing (please note ) were Sonny - Vice-Argentier, Chris - Vice-Enchanson, Tim - Vice-Conseiller Gastronomique. 14.01.2022 TUESDAY 6th October 2020 As we continue to be COVID free in WA and our spring weather emerges together with the days becoming longer and warmer we took the last opportunity in this eventful year to participate in a Jeans N Jumper casual feast at Mayfair Lane, a well-known pub & dining room in fashionable West Perth. We were served an exceptional surf and turf style feast which made us feel as though we had landed on the Monopoly board’s most valuable space. The only thing m...issing was collecting $200 after passing GO on the next roll of the dice. The wines served then gave us an increased international thrill having been sourced from three continents. Upon arrival a most magnificent array of tasty canapés was served accompanied by an Australian Redbank Prosecco styled sparkling wine from Victoria in the east of Australia. This was followed by a hot starter of Shark Bay scallops (a Chaine WA firm favorite) with truffled cauliflower puree and a parmesan crisp. An Italian Vermentino from Sardinia was crisp and a great enhancement to this tribute to local produce. The highlight of the evening was Stirling Ranges (the home of SW Australia’s highest peaks) Beef in two styles Tomahawk and Chateaubriand. Whilst both were exceptional and cooked to perfection medium rare the Tomahawk was truly outstanding with the size of the bone displaying great origins. Exotic duck fat potatoes, broccoli and roast baby carrots added the finishing touches. Red Wines from two continents, but from countries whose cultural and historical origins are inextricably linked, were served. A 2018 Tempranillo from Tora, Spain was offered along with a most delightful 2017 Malbec from Mendoza, Argentina. These countries are also renowned for their great beef producing capacity and their wines enhanced our most tender offering. The true feast continued with a candlelit display of cheeses and tempting mini desserts completing a comforting and casual event - a beautiful contrast to some of our more formal evenings. 14.01.2022 Greetings for World Chaine Day from Perth. The day also coincided with ANZAC (Australia New Zealand Army Corp) day 25 April, which commemorates the sacrifices made by all in defence over the last century. This year's dawn events were closed but many commemorated in their driveways. Last year I was in Northern France - Villers-Brettoneux where Australia's national memorial is situated. A poignant day for reflection but hope for when the world returns to normal. Vive la Chaine in the interim VcdP

11.01.2022 At the recently opened Ritz Carlton in Perth, the only Ritz Carlton in Australia and the 100th worldwide, we showcased our return with a Gourmet Odyssey degustation menu of local West Australian produce prepared by Executive Chef Jed Gerrard accompanied and paired with Leeuwin Estate Art Series wines from Margaret River. 10.01.2022 Wednesday 21st October 2020 As we continue to be COVID free in WA an Ordre Mondial des Gourmets Dégustateurs (OMGD) Masterclass was held to taste a full range of single malt whiskies available from the Balvenie brand, distilled in the Speyside region of the Highlands of Scotland. Our venue was Bar Lafayette, an exclusive wine and whisky bar in downtown Perth with a beautifully and exquisitely presented décor perfectly suited to such an event. Our Masterclass was performed ...in a private room with ten members present. OMGD is a limited membership section of the Perth bailliage, as it is of many other baillaige around the globe, appealing to professional sommeliers and members with a dedicated interest, enjoyment or passion for fine wines and quality spirits. This was the first OMGD event this year and it is perhaps relevant to reidentify the OMGD’s focus which can be seen in full at https://www.chainedesrotisseurs.com/base.php?s=7 The evening started with a most appealing, exciting, and classic whisky based cocktail entitled Blood and Sand. The main ingredient was one of the founding Single Malts that I can remember over half a century ago Glenfiddich, launched in 1961 and produced by the same most evergreen of distillers - William Grant and Sons of Dufftown, whose premier brand is Balvenie. After a few appetizers from a grazing plate we were ready to start our journey through six single malts. Balvenie, consistent with many other Speyside whiskies are generally considered in The Flavour Map to be in the quadrant of light and delicate, as opposed to the richer and smoky/peaty whiskies of Islay for example. Nevertheless we were presented whiskies across the full spectrum which appealed in varied measure to different tastes and palates. Our tasting menu incorporated the following six whiskies in ascending order of complexity and were expertly described and presented by our nominated Balvenie representative: Balvenie Doublewood 12 years Balvenie Stories 12 years The Sweet Taste of American Oak Balvenie Stories 14 years The Week of Peat Balvenie Caribbean Cask 14 years Balvenie Doublewood 17 years Balvenie Stories 19 years The Edge of Burnhead Wood All were exciting but the Doublewoods were highly praised and favourites amongst our group only surpassed by the highlight and culmination of the evening, the exclusive Balvenie Stories 19 years The Edge of Burnhead Wood. The evening had a wonderful air to it with a feeling we could have been in Scotland itself. The single malt whiskies were special and our education was certainly extended and our tastes refined. 09.01.2022 The beginnings of a new era for the Chaine in Western Australia. Six years ago, 6 May 2014 - a multi day event organised by the then Bali Outre Mers Bailliage with assistance from the WA Bailliage held over the weekend at several iconic vineyards in Margaret River. It then spawned the new Margaret River Bailliage which has, for the time being, been merged within the regional Bailliage of WA. A phenomenal start to what has become a great Bailliage, with an eclectic range of events, under the stewardship of our Bailli throughout Thurston Saulsman. We look forward to a return to 'normal' in the months ahead.
