24.01.2022 Malloreddus or gnocchetti Sardi. Those of you who have been to my classes know that one of my passions is high quality dried pasta which comes in many shapes. Once upon a time I was able to buy this shape in the best possible quality @genobilesaba were importing it. Sadly no longer, so I made my own More in stories and tomorrow a sort of tutorial on IGTV and if you are interested in learning send me an email to chat about your own Zoom class. 24.01.2022 I have been making a cake every Friday since this lockdown started. Last Friday’s was exceptionally good looking so I had to share. Campari and blood orange cake, a recipe I had in my collection since I don’t know when. A great one to serve as a dessert for when we can have dinner parties again, when???!

20.01.2022 Crema di zucca con fontina, not your ordinary pumpkin soup, the fontina cheese made it the best pumpkin soup I ever made (and it’s been on repeat on cold nights). The addition of hazelnuts on top are not my idea, one of my favourite chefs provided the inspiration. So glad I have had time to read and immerse myself in my cookbook collection, Heston Blumenthal’s at home is responsible for this gem of an idea. Happy Thursday everyone

19.01.2022 After almost three months away I thought I’d share last weekend’s project, a dish you have not seen much during the lockdown 1 & 2 #lasagna just one of the many dishes one makes when one has lots of time!! Cooking, recipe research and my cookbooks continue to keep me sane. I decided to do the real lasagna alla #Bolognese shared it with a few people and had pretty good feedback, I have the video of the assembly in stories, take a look. 13.01.2022 Here is the video and recipe for this stunning risotto. Cook the beetroot in the oven wrapped in a few layers of foil at 200 degrees for at least an hour or more depending on their size. Add salt and pepper and olive oil. To pickle the raw beetroot, cut in small cubes and cover with white vinegar a tsp of sugar and 1/2 a tsp of salt. If you love beetroot (and even if you don’t ) I recommend you try this risotto. E’ strepitoso Send me a DM if you have any questions. Happy Monday everyone

05.01.2022 Sagne, ceci e cozze, Abruzzo on a plate! Pasta with chickpeas and mussels. This is one of my favourite pastas in the whole world, my nonna used to make it and it’s typically found where I was born. Pasta simply made with just flour and water, no equipment needed, true!! I’ll be making this amazingly simple pasta with a different sauce on Sunday in another of the Zoom bespoke classes I started running recently. 01.01.2022 A Middle Eastern pie, in the we cannot go out anywhere series! From one of my Claudia Roden’s books. This is a sort of Turkish lamb, feta and spinach pie. My version really!
