20.01.2022 XO sauce, taking its name from Extra Old cognac, is a seafood sauce of dried scallops, dried prawns, dried anchovy, shallots, garlic, and chilli. Made slightly differently venue to venue, there is a certain amount of variety to this eponymous Hong Kong classic. 11.01.2022 Smashed cucumber is literally as it sounds; cucumbers halved lengthways whacked with the flat side of a heavy cleaver, an operation that sends seeds flying across the kitchen. They’re then chopped and tossed through a salt and sugar mix and left for an hour or so before being dished up with black fungus, spring onion, coriander, and minced garlic, served with lashings of our preserved olive vegetable dressing. 05.01.2022 Summer is around the corner, and as the days stretch out and the sun lingers a little longer each day, we want to help you bring home this very long year in an appropriately vivacious, fun, and flavoursome style! We are extending our opening hours and for the month of December we will be open for dinner Tuesday to Sunday, as well as lunch on Thursday, Friday, and Sunday. 04.01.2022 Salted duck egg yolks, which we use with our crispy fried school prawns, are transformed from these bright yellow, jube-like bulbs into (swipe) this soft, creamy, pale yellow foam. We steam the yolks, pass them through a drum sieve, and lightly cook them out with butter, salt, and white pepper. Once this mix hits the wok it begins to foam up nicely, which is when we throw in our prawns. A most assured trip to flavourtown!
