Just like last year, we’ve finished single malt spirit in casks previously used by Jean-Pascal Patisserie to make a jus for his fruit mince pies. This year the single malt chosen was from Old Hobart Distillery, selected especially for its bright and refined floral notes. 10.01.2022 The International Wine & Spirits awards ceremony was on in the wee hours of this morning, where we found we placed within the top 4 whiskies in the world. A huge congratulations to Finnish producers, Teerenpeli for the crown. We're so honoured to make the line up. Our distillery manager, Craig Johnstone, puts it well, "this was really great recognition. The pic they used to show off Lark was a team photo of Bill Lark, surrounded by the team all beaming at the camera because of the casks we just filled. They nailed our focus and values. And, our 96 Muscat and 95 Sherry scores are simply our new baseline.
