This little aphid is responsible for destroying most of the vineyards of Europe in the 19th century. It lives in soil and spreads on anything that moves between vineyards....especially our shoes! Once a vineyard is infected, there is no cure; the vines are debilitated and die. 01.01.2022 UGLY DELICIOUS. The cool, rainy season we have had for Vintage 2021 has brought plenty of challenges, and we normally want to harvest only pristine, perfect fruit. However, these conditions have resulted in some of the best opportunities for botrytised sweet winemaking. Botrytis is called Noble Rot, not because of its picturesque qualities but for its ability to dehydrate fruit, turning them into these little intense raisins, incredibly sweet and concentrated. This is Roussanne, and Viognier, a mere 300kg of fruit that we will have a go at making into a luscious, golden dessert wine; the first challenge is to press all that intense juice out!
