22.01.2022 Guess who’s back, in time for Summer? Roxanne!! Made from Grenache; she’s blossom pink and thirst-quenching; perfect for any occasion. ... Www.larkhill.wine/Roxanne
22.01.2022 Arriving just in time for our vintage to start is this beautiful new Europress grape press. It’s twice the size of our old press and a big upgrade on technology and serviceability.
21.01.2022 Grüner Veltliner; rather lovely this year!
20.01.2022 Going...going...gone! The colours of Grenache Rosé and yeast lees make a mesmerising sight.
19.01.2022 Smells as good as it looks. Here we’re aerating the Shiraz ferment to give the yeast plenty of oxygen and keep them relaxed. Slow-mo is to keep you relaxed.
18.01.2022 Not just a new vintage, but a brand new wine for us; we’re releasing our 2017 Syrah. Made from a single block at our Dark Horse Vineyard, fermented using indigenous yeast, 20% whole clusters and 12 months in fine grained French oak. It’s spicy, supple and evolving. $55 On tasting now at our Cellar Door or www.larkhill.wine/syrah
16.01.2022 Mourvèdre; what a colour.....
14.01.2022 Today we’re pressing Grenache for our Roxanne Pet-Nat; this is a delicate process to balance extracting lovely colour without tannin.
14.01.2022 Today is a catch-up on lab work; these are samples of 16 of the 19 wines we’ve made from vintage 2021.
14.01.2022 This is Mourvèdre; a brand new variety for us, from Hudson Vineyard in the Hilltops Region. Watch this space.
11.01.2022 We use Coravin in our Cellar Door to be able showcase some special wines without worrying about oxidation- and now we’re selling a Coravin Gas 2-packs- so you can access your treasured wine, one glass at a time, without worrying.
08.01.2022 Some of the last tranche of fruit in this vintage is our Bests clone Syrah from Dark Horse Vineyard. This delicious batch will be whole bunch fermented and destined to bring a spicy, perfumed lift to the blend.
07.01.2022 Not long now; this gorgeous Hudson Vineyard Shiraz will be harvested tomorrow morning and on its way to our Regional Shiraz blend.
06.01.2022 Hilltops Shiraz; 1/2 way through ferment and too good to share
05.01.2022 Vines need social distance too... Did you know that one of the greatest risks to vines is Phylloxera? This little aphid is responsible for destroying most of the vineyards of Europe in the 19th century. It lives in soil and spreads on anything that moves between vineyards....especially our shoes! Once a vineyard is infected, there is no cure; the vines are debilitated and die. Canberra is a phylloxera-free zone, but this depends on all of us to do our part in looking after o...ur local industry. #canberrawines #phylloxera #socialdistancing See more
04.01.2022 The first drain of Gruner Veltliner juice from the press; an aromatic wave of melon, fig, pepper and cut herbs
04.01.2022 We’re closed today to complete some electrical work- see you tomorrow from 11am!
01.01.2022 UGLY DELICIOUS. The cool, rainy season we have had for Vintage 2021 has brought plenty of challenges, and we normally want to harvest only pristine, perfect fruit. However, these conditions have resulted in some of the best opportunities for botrytised sweet winemaking. Botrytis is called Noble Rot, not because of its picturesque qualities but for its ability to dehydrate fruit, turning them into these little intense raisins, incredibly sweet and concentrated. This is Roussanne, and Viognier, a mere 300kg of fruit that we will have a go at making into a luscious, golden dessert wine; the first challenge is to press all that intense juice out!
