22.01.2022 Robust. Funky. Oozy. Our Le Rouge is all of those things. This large format washed rind cheese is our take on the famous French washed rind, Epoisses de Bourgogne. It is a soft matured cheese made with organic cow’s milk. The 500g wheels are hand washed in an annatto mixture during maturation. This imparts a terracotta red colour to the exterior of the cheese and a funky aroma and flavour to the interior. When ripe, Le Rouge’s straw-coloured pâte will ooze onto your plate and... has a beautiful, unctuous mouthfeel. Its aroma is robust and sharp but its flavour is actually quite subtle with meaty notes. Compared to Epoisses, this Australian cheese is milder in aroma and flavour and has a slightly firmer texture. Serving suggestion: Leave at room temperature for at least one hour before serving. Spread on a warm crusty baguette with some cherry paste or muscatels. Wash it all down with a fresh Chardonnay or a full-bodied Gewürztraminer.

12.01.2022 Fromage Fondant is a semi-hard cheese that we developed for its melting properties. Like the rest of our range, it is made with local organic cow’s milk. It is a rindless fresh cheese with a subtle milky aroma and creamy buttery taste with a touch of sweetness.. Fromage Fondant can be sliced thinly or grated before melting. It is the perfect addition to a cheese toastie, burger or pizza. Our recipe is modelled on the famous American melter, Monterey Jack. However, it is reall...y its own cheese due to the unique Victorian milk that it is made from. It joins a lineup that already includes our very popular melters, Raclette and Mepunga Gruyère. Serving suggestion: Fromage Fondant can be served fresh as a table cheese. However, we highly recommend that you melt it. The heat will produce a spectacular stretchy texture and augment the subtle savoury and sweet flavours. It will pair perfectly with a chilled Cider or Pale Ale.

11.01.2022 Grand Fleuri is one of the recent additions to our range. It is our take on the classic French double brie and, when ripe, will truly blossom to produce a rich buttery texture and a long creamy finish with surprising depth. Serving suggestion:... Leave at room temperature for one hour before serving and it will excel both on a cheese board or spread on a baguette. It can also be baked with garlic and rosemary. 04.01.2022 The simple things in life... Our Fermier is a Morbier-style cheese made using local organic cow’s milk. Like most modern Morbiers, it is made from a single milking batch and has a layer of charcoal running through its centre. It is pressed in cloth, hand salted and washed in brine during the maturation process. At 6 weeks, the cheese develops a sticky, orange rind which envelopes a dense, buttery pâte. The flavour is well rounded with a nutty, earthy finish.... Serving suggestion: The Fermier excels both as a table cheese and a melting cheese. Pair with a semi-sweet Gewürztraminer.
