He generously provided us with some of his bees raw Red Gum honey for our latest Tank 3 Series - Saison de Fleur. Deriving nectar from the Darebin Parklands his amazing bees have the same backyard as our resident microbes that help naturally ferment our farmhouse-style ales so we're excited to taste how these hyp...er-local influencers interact. The Saison de Fleur has been naturally fermented with this beautiful honey before an infusion of fresh chamomile flowers. Expect an abundance of floral chamomile aroma on pouring this fluffy, luminous honey-coloured saison. Complex fermentation character then fills the palate with notes of honey-blossom, apricot, banana and lemon sponge cake with a gentle, lingering herbaceousness creating a truly refreshing and unique farmhouse ale experience. 18.01.2022 CONVERGENCE is our latest release and a collaboration with @bannockburnvineyrards in Geelong, Victoria. It is a farmhouse ale that was allowed to 100% barrel ferment for 13 months in a Bannockburn puncheon with its Chardonnay lees & was co-fermented with our own local house yeast. As promised as part of the second installment of this tasty number here are Costas Brewers Notes on the collab! It was an absolute pleasure & an honour to work with Matt Holmes & hi...s dedicated team at Bannockburn Vineyards on this little project that perhaps shows that there sometimes can be overlap in beer with wine. This hybrid ale is a wonderfully cloudy & complex little number. I get a lot of stone fruits as it warms, along with crushed almonds and a lovely minerality (almost saline-ish) perhaps from Bannockburns semi-maritime climate, that delivers the finesse one would expect when drinking a Bannockburn wine. 17.01.2022 Not ONE but THREE rare & limited SINGLE BARREL releases. At La Sirene Brewing, we have been nurturing our unique style of artisan ales in french oak for over 10 years, garnering knowledge and creating complex and delicious liquid ales. Once in a while we discover a barrel that is so interesting and full of character, we don't need to add or blend a thing! This is the evolution of the SINGLE BARREL COLLECTION ... BARREL NO. 014 Barrel No. 014 housed our Farmhouse Red for more than three years and displays wonderful acidity & wild ale characters. This rustic amber ale is a product of time & patience. BARREL NO. 023 Barrel No. 023 is a non-carbonated still ale that was so unique we didn't want to do anything with it other than getting it into a bottle. Textural, buttery and complex like natural wine. Stunning! BARREL NO. 142 Barrel No. 142 is part of the Beer With Jeff collaboration we did with Jester King when they visited our brewery in 2018. This barrel displayed so much wonderful character that we decided to bottle it separately. 15.01.2022 NEW RELEASE CUVE de BOIS 2018: OAK AGED WILD ALE with CHARDONNAY - SOLERA METHOD The 2018 Cuve de Bois is a special wine hybrid, mixed fermentation farmhouse ale blended with select French oak barriques of La Sirne Saison. Using our vintage basket press, Australian free run juice and whole bunches from the Geelong region were brewed into a specially designed farmhouse beer, then blended with our barrel-aged Saison. The 2018 Cuve de Bois is a delightful blend of balanced wild farmhouse complexity and grape forward acidity crowned by the elegance and depth of toasted French oak.

15.01.2022 We are super excited to release CONVERGENCE: collaboration with Victorias illustrious Bannockburn Vineyards Being big fans of Geelong region wines & in particular Bannockburn Chardonnay, we thought it would be fascinating to co-ferment one of our Farmhouse Ales with the wild yeast from Bannockburns vineyards, with our house yeast, for fun! The result is a uniquely wild, barnyard yet vibrant wine-like wild ale. This 100% barrel-fermented Wild Ale commenced fermenta...tion in one of Bannockburns 500L puncheons at our brewery which had some chardonnay lees still left in it, and post fermentation was allowed to sit on the resulting lees for up to 13 months to really develop some texture and dual yeast expression. We would like to extend warm thanks to Matt Holmes Head Winemaker and his team @bannockburnvineyards for being open to experiment together. Its exciting to work cross-industries to create such unique Victorian beverages of elegance and place. 10.01.2022 BARREL AGED La Sirene goodness in a CAN.... must be OAK SEASON Limited Can Release The OAK SEASON is made in the Biere de Coupage style blending hand-selected barrel-aged wild ale with fresh farmhouse ale to create a wonderfully complex but ultimately refreshing oak-aged wild ale in a can. Expect deep oak-ripened complexity with buttery, earthy and woody notes followed by ripe apricots, orange blossom and a welcoming sharp grapefruit tang. Delicious!

Our VIN FOLIE is a unique series of Farmhouse-style ales that combines the best of rustic Farmhouse character with Australian seasonal red wine grapes. For our 2018 vintage we have used the juicy and big berried Chambourcin from the Mornington Peninsula region. Processed in our house style, we conducted multiple and synchronised mixed fermentations a ferment within a ferment to extract the subtleties of the grapes, yielding a luminous pink wild fermented Farmhouse style ale.
