17.01.2022 Still a favourite ~ Vegan Peanut Buttercups You will need: A cupcake tray lined with paper cases.... 2 blocks vegan chocolate- one milk, one dark. I love using @loving_earth Runny peanut butter- 3-4 tablespoons. How to: Slowly melt (half of both) your chocolate blocks in the microwave on low or over the stovetop in a seperate bowl over a saucepan of water (don’t let water touch the bowl). Take away from the heat often so it doesn’t burn. You want it to just melt and be gooey enough to pour into the cupcake tray. Pour the chocolate mixture into each case about 1/3 of the way and place the tray in the freezer for 25 minutes so it can harden. Remove from the fridge and add a heaped teaspoon of peanut butter to each cupcake case. Fill the rest of the way up with (other half both blocks) melted chocolate, and place back in the fridge for an hour or two until set. 14.01.2022 MINIMAL & MINDFUL - PART TWO. I love the concept of being minimal and mindful in life.. To me that means caring about what’s happening now, being present with your current situation, current thoughts, attitude, conversations and actions..... Yes I still believe in working towards a better tomorrow for yourself, but it’s what happens right now that makes tomorrow what it will be.. It means looking outside of yourself, putting yourself in another’s shoes, being a kind human, being less greedy and materialistic, and being more thrifty and practical. It’s being more thoughtful about where you are in this present moment, with what you are equipped with right now, not what you don’t have.. It’s reflecting on your values, your ideals, working with what you’re good at, and improving on what you can be better at.. It’s weighing up what’s worth it and what’s not.. It’s being responsible and respectful.. It’s realising that nothing outside of yourself is going to provide you with happiness and fulfilment.. It is already running deep within your veins.. It is our connection to nature and to others, our love for one another, our time and effort shared.. It is working on yourself, for yourself.. It is being fully aware of what you are doing in life and being brutally honest with yourself.
