12.01.2022 Singapore Noodles with Prawns. These taste exactly like the ones you buy from a restaurant. They are super quick to make and a great way to use up veggies in your fridge. Even better, my extremely fussy 3 year old LOVES them!!! I soak 1pkt of rice vermicelli noodles in some boiling water. While they soften.......... Heat some oil in a large frypan on really high heat. Add in 1-2 crushed garlic cloves and cook until fragrant. Then toss in some sliced onion, mushroom, broccoli, capsicum and grated carrot. Cook for a minute or two, then add... 1-2 tsp curry powder, a dash of sesame oil, a splash of tamari or soy sauce, a couple of shakes of oyster sauce, a squirt of kecap manis and a small sprinkle of caster sugar or stevia. Give that a quick mix then drain and add noodles. Give a good mix, then serve immediately. I cooked my prawns in some Thai Inspired olive oil and some Asian Stir-Fry Spice Blend then added to the noodles.
