10.01.2022 So excited with the "Vegetarian Rolls" I created for the kids dinner tonight.... In a food processor place 400g Pumpkin (this was the weight after it was peeled...), 250g ricotta, 100g walnuts, 1 "good handful" of baby spinach, 2 tblspns flaxseeds, 1 tspn coriander, 1/2 tspn sage, 1/2 tspn cumin, 1/2 tspn herbamare (or a good pinch of salt and pepper). Process for 1 minute until a paste is formed. Place approx 2cm high x 2cm wide amounts of this mixture at the end of puff pastry sheets and fold over. Brush with egg (this is for browning only and can be left off) and sprinkle with sesame seeds. Cut into quarters. Bake in 180c oven for 15-18 minutes (depending on your oven). Yummy additive free dinner that the kids devoured! See more
