25.01.2022 Some easy as cheesy pasta bake. I threw all the ingredients in a blender to chop em small. Added a spill of white wine and a jar of sour cream, few herbs salt and pepper. 14.01.2022 Follow up with the recipes which have been demonstrated on the 10th anniversary at Amway Brisbane. #iCook #cookingshow #cakeinapot #congee #steamfish #lowfat #lesssalt #multifunctioncookware #amway One Pot Pasta 200g fettuccini... 200g cherry tomatoes, sliced in half 100g baby spinach leaves 1 onion, finely sliced 3 cloves garlic, finely sliced 1 red chilli, finely chopped a handful of basil leaves, roughly chopped 2 tbsp extra virgin olive oil 600ml water/chicken stock 50g pecorino cheese, grated Sea salt and ground black pepper Method 1. Place the tomatoes, spinach, onion, garlic, and chilli across the base of senior iCook pan. The fettuccini in the centre of the pan and pour over the olive oil and 600ml of water or chicken stock. 2. Bring the contents of the pan to the boil. Stir the pasta regularly and cook for about 9 minutes until it’s cooked and the liquid has nearly evaporated creating a sauce. 3. Remove the pan from heat and stir though the pecorino cheese and basil. Season with sea salt and ground black pepper to serve. Congee with Steamed Fish 1 carrot, roughly diced 1 corn, roughly diced 3 cloves garlic, finely sliced 2tbsp canola oil 1cm ginger, finely sliced 600ml water 3 spring onions, finely sliced 200g enoki mushroom 200g white button mushroom 150g boiled rice 1 whole snapper (small) Method 1. Saute enoki mushroom and garlic in the iCook Wok for about 3 minutes. 2. Add the cooked rice, corn, and carrot into the Wok and fill up with 600ml until covered. 3. Bring the mixture to boil with closed lid, once boiling add in steamer rack and place fish on a plate on the rack. Steam for about 10 minutes or until fish is cooked, then remove fish from the Wok. 4. Take out the steamer rack add in white button mushrooms, and half of spring onion and continue simmer for another 5 minutes. 5. Meanwhile season the fish with soy sauce and garnish with spring onions and coriander leaves. Apple pan Cake 130g butter, warm/soft 150ml Milk, room temperature 150g sugar 300g self raising flower 3 eggs, room temperature 1-2 apple, finely sliced Method 1. Add butter and sugar to a bowl and beat until creamy. 2. Add one egg at a time and incorporate until smooth. 3. Add in milk and beat until combined, lastly add in Flower and give a quick stir until smooth. 4. Coat the senior pan with butter and dust a little sugar on the butter. Lay the apple in a circle shape in the pan and pour the cake mixture on top. 5. Cover the pan and place over low to medium heat and cook the cake for 15 - 20 minutes until the top is dry. 6. Turn the cake out onto a plate to server.

11.01.2022 Recipes for the cooking demonstration today at the Amway Brisbane Business Center. Protein Banana Pancake 5 Bananas... 2 eggs 40g Sugar 70g All Plant Protein 170g plain flour 20g chia seeds 5g baking powder 50ml Soy Milk 40g Walnuts Lightly beat the eggs, sugar and Soy Milk together then add all dry ingredients and keep stiring till combined. Slice the banana in rings. Add some dough into a pan and make sure it is not too thick. Then lay out the banana rings on top of it. Fry for about 3 minutes on low heat on each side. Braised Spring Dhal with Silverbeet 1tbsp Olive oil 1 brown onion, diced 1tbsp yellow mustard seeds 2tsp Garam Masala 2 cloves garlic 2cm fresh ginger 100g Tomato paste 2 cups vegetable stock 1 1/2 cup dried green lentils 300g butternut pumpkin diced 2 stems silverbeet fresh coriander for topping Heat oil in saucepan and fry onion over medium heat till softened. Add mustard seeds, farm masala garlic and ginger and cook for another minute. Sir in tomato paste and fry for another minute then add stock and 2 cups of water. Bring to simmer then add in the lentils. Reduce heat to low and cook for 20 min with covered lid. Add pumpkin and cook covered till tender, about 8 minutes depends on the size of the pumpkin dices. Wash and slice the silverbeet, if preferred the stalk can be removed. Add to lentils mixture and remain cooking for another 2 minutes. Season with salt and pepper and serve with Coriander leaves. Chicken Cacciatore 1tbsp Olive oil 500g chicken breast 1 onion, chopped 1carrot, finely chopped 4 stalks rosemary 200g champiogn mushroom 2 cloves garlic 1 cup redline 500g diced tomatoes 1 litre chicken stock 250g rigatoni pasta 200g pitted olives 1 bunch Parsley Heat oil in tall pot. Cook chicken for about 4 minutes till golden brown. Take out and set aside. Add onion, carrot, celery mushroom, garlic and rosemary to pan and cook stirring occasionally for 5 minutes. Add wine and bring to simmer. Reduce wine by half. Add diced tomatoes and chicken stock and bring to simmer. Add Rigatoni Pasta in cover and cook for 12 - 15 minutes till pasta is al dente. Add olives last and remain cooking for another 2 minutes then server with parsley and rosemary on top

05.01.2022 Here we go with the recipes for the iCook demonstration on the 16th of July at the Amway business Center Brisbane Steamed Fish with Mixed Mushrooms 400g mixed Mushrooms... 1 whole fish 1tsp Olive Oil 1 bunch spring onion 1. Place mushrooms in senior pan add fish on top and cover with lid. 2. Heat on medium heat till lid starts to move, then turn down to low heat and cook for 15-20min 3. Drizzle olive oil and soy sauce sprinkle spring onion and serve. Roti 175g Flour 50g All Plant Protein 1/2 tsp salt 1 tbsp olive oil 140 ml Water 1. Combine all ingredients to a smooth dough. If the mixture feels too dry add a little more water, if too wet add a little flour. 2. Knead for 3 minutes on a slightly floured workbench. Then set aside and rest for 10 minutes. 3. Divide dough into 6 pieces and roll out to a circle. 4. Heat the pan and wipe with a little bit of oil. Slide in the roti and fry on each side for 1-2 minutes till it starts to puff. Eggplant Dip: 3 big eggplant 1 tbsp coriander seeds 1 tsp cumin seeds 2 tbsp olive oil 1 small onion sliced 4 cloves garlic crushed 2 tbsp tahini (sesame paste) 1 big lemon - Juice and zest 2 small chillies 70ml olive oil 1 tsp salt 1 bunch parsley 1. Place eggplants in a medium heat fry pan for about 20 minutes and constantly turning until evenly coloured and soft. Scoop the eggplant flesh from the skins. 2. Fry coriander and cumin seed in a pan without oil for 1-2 minutes. Then crush in a mortar or spice blender. 3. Heat 2tbsp olive oil in a frypan over medium heat. Add onion and garlic and fry for 4 minutes. Add spices and cook for another 2 minutes. Then add eggplant and remain cooking for 2 minutes. Set aside and allow to cool a little bit before blending. 4. Add the eggplant mixture, tahini, lemon zest and juice and chilli in a blender to blend till smooth. Add olive oil and parsley and blend for 30 seconds. Transfer to a bowl to serve and sprinkle with a little olive oil. Shredded Fennel and Cabbage Salad 1 small savoy cabbage very finely shredded 1 bulb fennel, finely shredded 50ml white balsamic vinegar 150 ml olive oil 50ml aged balsamic vinegar 100g Parmesan salt flakes white pepper Coriander for topping 1. Mix finely shredded cabbage and fennel in a large bowl and dress with white balsamic and olive oil. Add a pinch of salt and 50g of the parmesan and mix gently. 2. To serve sprinkle rest of parmesan on top and add some coriander. Drizzle with the aged balsamic vinegar and ground some white pepper onto the salad.
