These mini-cakes are the perfect snack, or sweet bite with your coffee You will need ... -33g of almond powder -33g of flour -100g sugar -50g butter -3 egg whites -1/3 teaspoon vanilla extract -1 small pinch of salt First preheat the oven to 200 C then butter the financier mold (or any small size mold). Mix the ground almonds, sugar, flour and vanilla in a bowl. Whip the egg whites until stiff with a pinch of salt and add it to the previous mixture. Melt the butter in a saucepan and add it to the dough. Pour into the mold and put in the oven for 15 to 20 min.
