11.01.2022 The Standard Steel The standard or basic model steel is supplied in bare metal, it is stain resistant because of the high chromium content, but it is not rust proof. The steel must be kept clean and dry after use. The steel is supplied in one of three cuts, fine, medium and coarse the handle is supplied in acetal plastic and the lanyard is made from a single piece of stainless the bare metal steel is ideally suited to professional knife hands like slaughter men, boners and th...e people that use knives every day. These steels can be re-sharpened when the cut wears, to re-sharpen the steel or change the cut of the steel from fine to medium and vise versa just rub length wise with a silicon carbide sharpening stone. The cut of the steel can be changed to suit individual work applications. The guard is supplied in acetal plastic, the steel and handle are press fitted together for extra strength See more

07.01.2022 The Handle The handle is made from polyacetal plastic which is one of the hardest and most durable plastics on the market. It is harder and more abrasive resistant than polyethylene (P.E.) and polyvinal chloride (P.V.C) polyacetal is ideally suited for use in water with temperatures of up to 90 degrees Celsius. This means it can be sterilized constantly, without any side effects. The handle fittings on the hilt and pommel are made from hardened stainless steel, to give extra ...strength to the handle and the assembly of the steel the tang is full length, and made from 316 marine grade stainless steel. The lanyard is also made from 316 grade stainless. The handle has no moving parts and no cavities to harbor bacteria. The steel has been inspected by the Australian Quarantine Inspection Service (A.Q.I.S) and been passed for use in an export meat works. The guard is also made of polyacltal to protect the tip of the knife when it over travels .
03.01.2022 The Steel These steels are machined with two tapers, the same as the Williams Pipe, Wilson and Henry Berry steels had years ago. I have had these antique steels chemically analyzed to find out what the steels alloy components were, so I could make a steel with higher quality materials my steels are made from a much higher quality material than the antique steels of years gone by. The type of steel material I use has a very high resistance to abrasive wear. It is a high carbo...n high chromium steel, it also has a higher hardness than the older type steels. This keeps the steel sharper for longer. The steel shaft has a flange on the handle end that has an internal and external radius to stop your knife from over traveling and hitting the guard. The flange is polished to prevent damage to the tip of the knife. The tang of the steel which is concealed in the handle has the type of material used to make the steel and the year it was produced stamped on it, for identification in the future. Steels can be made to order, lengths from 125mm to 350mm. Most popular lengths are 200, 300 and 350mm all steels have the double taper design feature these steels will sharpen all types of knives from scalpels to large steak knives, kitchen knives and filleting knives.
