15.01.2022 Our Nihon Caprese is easy peasy to make & it makes a great side for a few people or as an entree for two people... Heres the recipe! . ---- INGREDIENTS ---- Vine ripened tomatoes 2ea Cherry tomatoes 125g ... Silken tofu 125g Fresh basil 2 sprigs . ---- INGREDIENTS (DRESSING) ---- Red wine vinegar 100ml Dijon mustard 15g Extra virgin olive oil 200ml S&P (to taste) . ---- METHOD ---- First things first whip up the salad itself. Drain the liquid that the tofu may have been stored in. and then roughly chop it. For a more rustic look you can use your hands to tear it into chunky pieces. Place it in your serving dish or bowl. . Move onto the tomatoes quarter the cherry & Roma tomatoes, place them in the bowl with the tofu. Now pick all the leaves off the basil (be gentle with them), and place them in the bowl as well. . To prepare the dressing: Add the vinegar & Dijon into a bowl. Add the olive oil to a measuring jug. Next, using either a stick blender or a whisk, blend the vinegar & Dijon mustard. Continue mixing while slowly pouring in the oil. Once the oil & vinegar have completely emulsified, taste & season with salt and pepper to your desired flavour. . Pour the dressing over your tofu, basil & tomato then toss until the dressing completely covers everything. Your salad is now ready to eat! See more

12.01.2022 Psst.... Its Mothers Day today kids (and Dads)! Make her a homemade meal to remember - pasta... from scratch. This is one of Ashs favourite meals to make for his family, maybe it will be one of yours too. So what are you waiting for, lets get cooking! -----Ingredients:----- 675g "00 Flour 380g Egg Yolks... 105g Whole Eggs 100ml EV Olive Oil 5g Salt -----Method:----- After weighing out all the ingredients, combine the flour, salt and oil in a medium sized bowl and rub the oil into the flour until there arent any more lumps. Whisk the yolks and whole eggs together then make a well in the middle of the flour and pour in the egg mix. Using your clean hands start bringing the edges of the flour towards the middle little by little. Eventually it will become quite sticky (oh and most likely be sticking to you hands, just rub your hands together to get it off). Keep working the dough until you form a even rounded ball. This could take up to 3-5mins of kneading. Place a cover over the bowl and let the dough rest in the fridge for at least 2hrs. Once rested, dust a bench with flour and cut the dough into quarters and with either a pasta dough machine or rolling pin roll the dough out to your desired thickness and shape. This dough can be made in advance and stored in the freezer after being portioned. From the freezer it will only take a few minutes to cook in boiling salted water depending on the thickness and size. Try a piece first before serving to make sure. Serve with your favourite pasta sauce - were thinking pesto or bolognese - you know what she likes

05.01.2022 Fast facts about the man behind the menu... Ashley Hughes our Exec chef. Ash started he career as a chef at the ripe old age of 14. He worked as a dishwasher in his home town of Cooroy & shortly after started his apprenticeship. This guys loves everything JAPAN. He is completely obsessed with their food (his fav food is ramen). He has lived & worked there. And he even appeared on a Japanese TV cooking competition (coming in second place).... Ash enjoys starting the day with a long black & finishin g it with his favourite cocktail, a Negroni.
