07.01.2022 With Greek Easter coming up in a few weeks we are going to be using lots of this unique ingredient, called MASTICHA () The mastic tree grows in many parts of the world, but its resin is only extractable in the southern part of Chios in an area called the (Mastic villages). We are lucky enough that our Auntie bought us a heap of these mastic beads from Chios and we keep them in an airtight container in the pantry just for Easter.... Masticha is a natural chewing gum, however when it is dried you can grind it in a mortar and pestle to use in the Greek Easter classics, like Tsourekia and Flaounes. We always add a teaspoon of sugar, together with the mastic beads, when we grind them to make sure that the mastic doesn't stick together. 04.01.2022 There’s nothing yummier than Patates Sto Fourno (Oven Roasted Potatoes) TOP TIPS: - par boil whole, peeled potatoes - cut into wedges... - put back in pot - drizzle olive oil, oregano & salt - put lid on saucepan and shake shake shake to rough up the potatoes - lay out on baking tray - roast in 210C oven - cook until crunchy (approx 30 mins) For lemon potatoes do the same but squeeze lemon juice in pot before shaking! !
