09.01.2022 Wagyu Rump Special. https://mudgeelamb.com.au/products/special-rump-steak Youd think we would eat like the ultimate carnivores at the farm, but although my bride and her sous chef (thermie) cook like hatted chefs, the truth is we usually get whats ever left over at the shop and the top shelf is usually out of our reach. So last night I was under strict instructions to bring home something nice for dinner, I was directed to the 2 eye fillets cleverly hidden next to the dog bo...nes when she did her shop make over early in the day, only to find they had both been sold 10min ago! bugger. So I went on a hunt and discovered the 2 Wagyu Rumps left over after the run went out had my name on them!. Cooking a steak is the really the easy bit, I turn the BBQ on, grab a beer and watch it heat up while the chef preps the steaks, makes the salad, prepares sauces and in this case fries up the prawns. Im handed the tray and Im off! clear instructions given do not to overcook them. So my secret to the perfect seal is easy: 1. Rub the steak all over with a good lug of olive oil and a good pinch of sea salt and black pepper 2. Add the steak to the hot BBQ, then cook for 6 minutes turning every minute, I like to get a criss cross pattern going on here. 3. Remove from BBQ cover with foil and let it rest for 4-5min, done! Now lets plate it up, my job again pretty simple I get the glasses of water, Grace is said, then lets eat! I then realise I forgot to take a picture opps.. Yep, this all a long winded story buy what I set out to say was I ate the Wagyu, it is amazing, buy some and live like the other half. Id love to hear some steak tales if you have a tip or recommendation. M

Last year, at just 20 years of age, he achieved huge success competing with the NSW Butchery team and now hes going to continue his love of competing - hes off to Auckland this month to compete in the next round of Butcher Wars. Hell be competing with not only the best from NZ but some international competitors as well. While we cant go and watch him this time well certainly be cheering him on from the home front.
