21.01.2022 Yes people, its that time again! :D Put in an order for your favourite loaf and pick up fresh on Wednesday morning :) Just wanted to share a little market moment from the other week... One of our regular customers came and told me that their family had been struggling with bread and had kind of given up, some with digestive problems and other things, but now that they've found our bread they can eat it every day :D So glad, so grateful, thankyou xx

02.01.2022 For our bread nerds :) This is the "gluten window" in our Hearty Mixed Grain dough after mixing. This dough is rather soggy and goopy at 75% hydration once the soaker is added, it makes for difficult handling but such a great bread, moist and chewy. The gluten window is an easy way to test the strength of your gluten development ei; how strong your dough is, super important with wetter doughs. Good fun for adventurous bakers :D
