25.01.2022 Grandchildren are the best. This is our beautiful boy Harvey. He is 6 months old and just fills all of our hearts. It's so true what they say, being a grandparent is the absolute best. Harvey loves animals already and just lights up a room when he's there. I so can't wait for us all to be able to be together again. He really has the best family on both sides and is so loved. 24.01.2022 So I was going to cook a roast chicken tonight but forgot I put it in the freezer yesterday, lol. Whoops . So pulled some steak out, that should defrost reasonably quickly and then thought what will I do for veggies. So, potato, carrot, cauliflower, spring onion, capsicum cut into strips and layered. Cheese grated on top. Sour cream, left over cream, chicken stock, with a little water mixed together and poured over the top. Into the oven for not sure how long? Maybe 1-2 ...hours slow oven (until veggies soft). Dinner sorted What's everyone having tonight?

20.01.2022 Not sure whether this is a proud mum moment or an oh dear what have I done lol. As most would know I'm a little OCD! A few months back I watched someone on Facebook fold the plastic grocery bags into triangles. Well I loved it so did that to all the bags I had. Was a little bored at the time but it's now something I always do. Ok yep, a tad crazy. Penny had her first visit home today after 6 weeks of not being home due to restrictions and went to get a bag to put all her g...oodies in to go home (she only likes coming home to collect all the food I make her lol) but she was so excited to find all the bags in triangles. She's now home and sent me through these photos. Too funny not to share What quirky things have you been up to during iso? I'm sure I'm not the only one lol.

14.01.2022 You seriously can't go past these amazing visuals. This is blood sugar rises in a health young lady. Sorry to say but if you have diabetes your results would be worse and they would stay high for longer which causes the damage. Our aim as nutritionists is to support you with food ideas that will keep your blood sugars stable. This helps with so many more diseases than diabetes. Heart disease, Mental Health issues, Insulin resistance, obesity, Poly Cyctic Ovary Syndrome, Autism, Cognitive function, Dementia. The list is endless. Time for change.

13.01.2022 Something that is very concerning and dear to my heart. I'm often mortified at what is served up and knowing that real good food can reverse disease including dementia. Our aging population deserve better but unfortunately money is the dictating factor in a lot of this.

13.01.2022 What do you do on a cold wintry day? I cook. What's cooking, well I have a plan in my head so will see if it works. Salmon fillets cooked for 2 mins on both sides in olive oil and butter and then into casserole dish. Vege cooking now, onion, garlic, carrot, red capsicum and zucchini Mixed some red curry paste in half tin coconut cream.... Added the curry mix and 1/2 cup water to the veggies, add some chopped fresh herbs (I have coriander and Vietnamese mint from my garden), a tbsp freshly squeezed lemon juice, cook for 5 and then add to salmon fillets. Into the oven for 20 mins 180 degree Celsius. And WOW, tastes amazing. Time to get creative

12.01.2022 What a great initiative. I tried to share the link but don't think it worked. All about supporting our local farmers. The wonderful thing is that we have Internet and for those of us lucky enough to enjoy technology can still access all the wonderful local manufacturers by ordering online. We are so lucky in Echuca with Quality stores like the Pear Tree and Forever Fresh that stock some of these items as well so have a look when you do your online shopping and let's all work together to make buying home grown Australian produce where we can.

11.01.2022 This is fantastic and reflects what I explain to my clients in the clinic. Kelly is a fit 29 year old with no diabetes or illnesses. Understand that everyone is different so results will vary but shows the more fat and fibre you add to a food that has carbohydrate the less effect that it has on your blood sugars and insulin demand. This is why I say add some Extra Virgin Olive Oil or butter to your vegetables before consuming, this will reduce the effect and make you feel fu...ller for longer. Adding some raw nuts can also assist with this. Most of you will be well versed with Glycaemic Index but we really want to know the Glycaemic Load, and this is the effect that the food has on the insulin. Most people over the age of 30 have insulin resistance and this is the precursor to disease . Time for change, time to stand up for your health and improve your heal outcomes, it isn't that hard. 08.01.2022 Being addicted to sugar is a biological disorder, driven by hormones and neurotransmitters that fuel sugar and carb cravings leading to uncontrolled overeatin...g. The good news is we can break our sugar addiction. Here are 8 ways to combat sugar: 1) Eat real food. You need to eat fat and protein for each of your meals. Whole foods carbohydrates like veggies, legumes, nuts & seeds are perfectly healthy. Processed, sugary junk foods are not real foods. They set the stage for sugar addiction and all its ugly consequences. 2) Steady blood sugar levels. Eat a nutritious breakfast with some protein like eggs, protein shakes, or nut butters. Also, have smaller meals throughout the day. Eat every 3-4 hours and have some protein with each snack or meal (lean animal protein, nuts, seeds, beans). Avoid eating three hours before bedtime. 3) Ditch sugar. Go cold turkey. You must eliminate refined sugars, sodas, fruit juices, & artificial sweeteners from your diet. 4) Reduce stress. 07.01.2022 So it dawned on my today that I only have 3 working weeks left until Christmas. Wow, how quick has this year gone! For many it's been the toughest year of your lives, for some of us it's been a mix of challanges but also some overwhelming success. I am in the later community, I am an essential worker so I didn't have any time off. The hardest thing was not seeing family and friends. But, I was able to adapt my private practice to Telehealth and the Wound Clinic at the hospita...l was finally cemented in concrete after the risk of loosing it because the funding had stopped. I am so grateful to ERH who saw the importance of this clinic and the value it provided to the community. For many clients who have suffered from wounds this last 12 months has been a relief for them as they no longer needed to travel to larger centres to receive care. In January I received my credentialling from Wounds Australia. To finally have a body that recognise the importance of Wound clinicians and to be able to add that the the CV was a huge honour. I continued to educate health professionals in a mix of face to face and zoom during the year and look forward to the upcoming PHN event. We welcomed our little grandson into this world on the 29th February and our little leapling baby has given us all so much joy. He is a very blessed little fellow having so many people love him. And then we had further exciting news that he is going to be a big brother in April 2021. In an endeavour to give back to a community that has given me so much support over the years I applied to be a director on the board of Wounds Australia. This was accepted on the 5th November this year and I look forward to being a part of an amazing group of wonderful people working towards reducing the harm caused by Wounds. In my private practice it has grown to not only providing nutrition and health coaching but to supporting nursing homes with consulting and education. Yes I am busy but wouldn't have it any other way. In my spare time I have almost painted the entire house inside and out (still a bit to go, lol, does it ever end?) as well as hubby and I attending to gardening, laying new flooring and attending to our dog, chooks, and cats. So I am really hoping that 2021 is an improvement on this year for all those that have suffered. Appreciate the small things in life. The freedoms of being with loved ones and our communities. So nice to be back in the Pharmacy . * I will continue to offer Telehealth or phone consultations for anyone who lives away or prefers this method. This will not change.... * I am available to see all my returning clients face to face as these are shorter visits in the office but we must wear masks and have temperature taken as per Government regulations. If you are UNWELL with any illness please call and change appointment to telehealth and I will do the same for you. Every reminder message will continue to contain the link, this way there is ALWAYS an option. All new clients will need to be via Telehealth for the initial consultation as they go for 1.5 hours and this exceeds the recommended length of time that we are to be in a confined space together. If there is another wave of COVID we will immediately return to 100% Telehealth and I will stay home. If you require any clarification please don't hesitate to contact me.

06.01.2022 Learn something new every day!!! I just assumed (and not sure why) that pouring cream couldn't be whipped. Well it can . Everytime I have to buy cream not from Aldi I cringe cause it has all these extras added. I have bought Aldi pure pouring cream for years because it doesn't have any nasties and I use meander valley for a thicker cream. So from now on, Aldi pouring cream will be whipped when required

05.01.2022 Good news. A serve of almonds is 30g which is about 23 almonds. They are so good for our health especially cardiac health. Packed full of essential nutrients and good fat. Make sure you include a serve a day in your daily routine. Yum. Even add to your vegetables or salad. ... And they are grown here in Australia. So sad it is coming to an end :-( There are only very few appointments over the coming weeks so if you are wanting an appointment jump onto the site and book in or you can call or text 0438700296. Otherwise there is a 4 week wait for Nutrition consultations.... On the upside for the Chronic Wound Care Service, the team has availability, so if you know someone who needs care and they are not able to leave their home and are on an Aged Care or NDIS Package (they will need to check with their case manager first) then they can utilise the service. We are trying to make specialised care more available to everyone. Time for change.

01.01.2022 So I found this recipe the other day for a friend and thought, looks good so I made it yesterday. Nope, NOT disappointed. Oh yum. I used Natvia as the sweetener and it is everything it promises. One of my jobs is to compromise. Still enjoy in moderation but at least you can have a piece of cake without the worry it will raise your blood sugars! (Please note that everyone is different so need to take in individual situation)
