20.01.2022 There seem to be an increasing number of overweight vegetarians needing consultations lately. Often the biggest issue is they substitute protein for heavy carbohydrate based meals with inadequate vegetables. I.e. refined rice dishes, pasta dishes, thick bread, plain noodles etc. ... I did a bit of search online for vegetarian meal recipes and no wonder their meals are so imbalanced! Guide to vegetarian meals: 1) at least 2 cups of vegetables (min. 2 colours) per serve 2) protein source: tofu/lentils/legumes/eggs/yoghurt (cheese should not be the main protein source) 3) wholegrains (1cup): corn on the cob, mixed grain rice, buckwheat, barley etc. So here is a recipe to share, enjoy! http://www.glnc.org.au//pulse-based-recip/lentil-moussaka/
