18.01.2022 {Coconut Raspberry Jellies} It's December already! Time to start thinking about some simple and healthy treats for sharing with family and friends... How about ...these little coconut raspberry jellies? You can keep them in the freezer for when you need them! I've also sent out lots more ideas in my Quirky Christmas newsletter today, so check you inbox! This is a super simple recipe! You can sweeten the jelly to your taste (use maple syrup if you prefer), and you can use either homemade coconut cream or tinned cream. (I used homemade and it separated a little, which actually looked really cool I thought, ha ha! The recipe for coconut cream is in both the Quirky Cooking and Life-Changing Food cookbooks.) And by the way, that's vanilla powder not pepper in the jelly in case you were worried that my pepper addiction had gone too far... Enjoy! Coconut Raspberry Jellies Coconut jelly: 250ml coconut cream 1 Tbsp gelatine 50g honey tsp vanilla powder or tsp vanilla extract Raspberry jelly: 250g frozen raspberries 40g honey 1 Tbsp gelatine Method 1. Prepare moulds for jellies by placing them on a baking tray. Or line a small (26x19cm) rectangular dish with baking paper and set aside. 2. Coconut jelly: Place the coconut cream, gelatine, honey and vanilla in a heavy-based saucepan and warm, stirring, over medium heat until bubbles form on the edges. Remove from heat and pour into moulds or dish, filling half full. Place the tray or dish carefully into the freezer (making sure to keep level). Chill for at least 30 minutes or until firm before adding the next layer. 3. Raspberry jelly: Place raspberries, honey and gelatine into a heavy-based saucepan and heat over medium heat, stirring, until it begins to simmer. Reduce heat to low and keep stirring until raspberries have broken up, about 10 minutes. Strain jelly through a fine metal sieve into a bowl and allow to cool until room temp but not cool enough to set. 4. Pour raspberry jelly carefully over the coconut jelly to the top of the moulds or dish. Place back into the freezer to set for at least 30 minutes or until firm. 5. Pop jellies out of moulds into containers. Or if jelly is in a dish, slice into 2cm cubes and place into containers. Thermomix Notes: To cook coconut jelly: Place all ingredients into TM bowl and cook 8 mins/80C/speed 2. To cook raspberry jelly: Place all ingredients into TM bowl and cook 10 mins/90C/speed 2. Strain and continue as above. Storage: Store in airtight containers in the fridge for up to 5 days, or freeze for up to 3 months and thaw before serving.
