22.01.2022 Here are the Radish pickles I made, as well as Fennel pickles. I opened the jar last night after letting them sit for a few days. Wow! They are so good. We haven't tried the Fennel yet. I am loving trying new recipes and ways to preserve the harvest from the garden. I am craving being more creative so I am starting a new journal where I will draw or paint the plant and then write down my favourite recipes and/or preserving methods for each one. Looking forward to combining everything I love. #radish #pickling #preservingfood

21.01.2022 I might try pickling these French Breakfast Radish. Radish remind me of my childhood when I would eat them fresh out of the garden. Dad always had a huge vegetable garden, he had an amazing green thumb. 20.01.2022 I've not been on social media much of late. Oh wait! I have been on YouTube. A lot! Learning new things which has been so good for the soul. But I walk out in the garden most days checking on its progress and collecting salad leaves for meals when needed. Watching and waiting for things to grow is a good lesson for my lack of patience. I planted a couple of mini roses about a month ago and found they have some buds starting to open. I love home grown roses. I must plant more next year. #homegarden #miniroses

07.01.2022 Before I got to this place of freedom and living a more simplified life I had to forgive myself. Truth is I am still trying. I have two strong, beautiful children, now adults. But I spent a lot of time wallowing in regret that I was not a better mother to them when they were young. You see I had a lot of learning to do about myself. I had to grow as a person. I wish I had been the person I am now, back then. I wish I could go back and teach them what behaviour is acceptable a...nd what is not. How to stand strong in what you believe. I still struggle in standing up and being confident in my beliefs and who I am for fear of being ridiculed and hated. But I grow each day and they see that. We have open conversations about our thoughts and beliefs. It's never too late. Always grow. Always strive to be better. Be open minded and have open communication with your kids where everyone feels safe to express themselves. And forgive yourself. See more

07.01.2022 One year ago today I left St Jean Pied de Port, France setting out on the Camino Frances. It was pouring rain. Little did I know the rain would be a common theme throughout the 800km trek to Santiago de Compostela, Spain. I knew the journey would change me in some way. I just didn't know what how incredibly hard, painful, inspiring and life changing it would actually be. I am still overwhelmed by the experience. I am so grateful to have done it. #caminodesantiago #camino #caminofrances

07.01.2022 Isn't this gardening adventure fun? (Note the sarcasm?) I finally raise seedlings from seed (lots of lessons learnt) and the seeds I sowed directly all popped up this week. And then the possums came. Happily snacking on the smorgasbord I had planted for them. So, nearly all the beds were netted. And now, this morning I wake up to snow. Snow!! In May (autumn in Australia). We were lucky to get some snow last year. In Winter! I appreciate the snow and all it's beauty. It's rare for us to experience it. But could you have held off just a little bit. Until my plant babies had grown a little more. I seemed destined to overcome lots of challenges no matter the path I take. 04.01.2022 My soul sings when I am in the garden or kitchen. Well, when I'm in the kitchen being creative. I was away walking the Camino when our tomato plants were growing so when I got back I got busy harvesting. Only cherry tomatoes and all volunteers. But I hate to waste good food so we roasted the tomatoes with garlic and fresh herbs and then froze them. Yesterday I hauled all the containers out of the freezer and made passata. I then preserved the jars so they will be good to store for a couple of years. #preserving #homegrownfood #passata

03.01.2022 Trying my hand at growing some microgreens. Lots of fun watching them grow so quickly. The mustard greens are peppery and the radish are, well, radishy . The peas are a little slower to grow. I will be topping a stir fry with some of these for lunch and tomorrow they will be added to a steak sandwich. A great way to enjoy fresh greens if things are slow growing in the garden or you don't have much space. #microgreens #freshfoods
