23.01.2022 I FINALLY made Mick’s Ciabatta Rolls last night! Another item that has been on my to-do list as it has had so many good reviews! It does take prepping 1 day prior as you make a ‘poulish’, but it’s totally worth the wait! Lily was pretty excited this morning to have a ham & cheese sandwich with home-made bread! ... 23.01.2022 After doing a delivery for my awesome sis-in-law, Lily asked me if we could have Risotto Verde for dinner and if she could cook it! 19.01.2022 Chicken With Spinach & Almond Pesto Tagliatelle- quick, easy and so delicious! I switched it up tonight and used my leftover pork and chose spiral pasted instead of the tagliatelle. I absolutely love this pesto just on its own as well, so I made double to give me something delicious to look forward to on the weekend!

18.01.2022 Last night we made some amazing soups at our workshop! I got to make Broccoli Soup with Sage Oil and of course, the awesome Brazilian Cheese Puffs! It was absolutely delicious and for sure something I will be making again!

I’ve been wanting to try this for so long and very glad I did! *If you are sensitive to caffeine but still want the flavour, swap half the amount of coffee for half decaf coffee*... 17.01.2022 One of the great things about my Thermi, is it means I am less stressed at dinner time and more able to think of ways Lily can help me cook! I used to be an angry cook, just wanted to get in cook & get it done and didnt want to think about how I could let Lily help me despite her always asking and keen to join in. Thermi has allowed me to relax and take it easy while cooking! Now, I still do get in moods from time to time when I cook, but its moments like tonight that re...mind me that I need to let go of the control and allow her to learn some skills in the kitchen! Tonight on the menu is: Beef Cobbler With Polenta Dumplings! Lily rolled the dumplings to perfection ready for me to just plop on top of the Cobbler. This also allowed me to tidy the kitchen while Thermi was cooking so, once its out of the oven, I even have a clean kitchen!

16.01.2022 After I made my home-made Butter the other night, I was itching to bake with it straight away!! I saw the Blueberry & White Chocolate Traybake as one of the Most Cooked items on the Cookidoo home page and knew I had to give it a go! It was amazing! I can see why so many people are making it at the moment I took some into work (so I didnt eat the whole tray ) and everyone raved about it, gave two pieces to my mum who was going to give one to my Grandma, but ate both because it was too good! 16.01.2022 After staring at the Chinese Chicken Noodle Soup for months, I decided to finally cook it the other night and it didnt disappoint! It was absolutely delicious and Lily demolished the whole bowl!

15.01.2022 When looking around my kitchen today, I noticed my cream was about to go off and I had about 8 apples in the bowl screaming my name to purée them! So I easily put the cream in the bowl, butterfly whisk, Speed 4 and away I went! I used ALDI home brand cream this time and it took about 4 1/2 minutes to separate. Drained the buttermilk and put the milk in the freezer to use for something another day. Chucked the butter and 500ml of cold water back in the bowl, whisk, Speed 4 fo...r 10 seconds and the Butter was done! Next task, used an apple slicer to quickly core and chop the apples, then put them in skin and all! Put some cinnamon, vanilla and a teaspoon of raw sugar and away we went at Speed 1, Varoma, for 25 minutes. Easy! Once that was done, used the blend function for 30 seconds at speed 8 and I now have delicious homemade apple purée! I think I spent a total of 5 minutes actually IN the kitchen!

13.01.2022 Made a quick dinner tonight with the left over roast chicken! Pulled Chicken Burgers- Lily ate it in record time & loved that it tasted like ribs! - Put the chicken in the Thermi on speed 3 for 10seconds to shred; -2/3 sweet baby rays, 1/3 barbecue sauce then about 2tsp smoked paprika and a few squirts of Worcestershire sauce- adjust sauce amounts depending on how saucy you like your chicken; - Then 5 minutes, reverse blades, speed 1, temperature 100... - Whacked it on a brioche bun with some rocket, cheese and aioli. Delicious dinner in 10 minutes!!

10.01.2022 Last night I finally decided to try making Butter! Its been one of the things on my to do list since I got my Thermi, but just never seemed to get around to it. I used 600ml of Home Brand Thickened Cream and within 5 minutes I had: 250g Butter & 225g of Butter Milk! Tips & Tricks... - Use cream close to the best before date- that means whenever you see it on special, buy it up and freeze the butter once made -ONLY use pure cream or thickened cream, anything with more additives wont work, for example, extra thick cream or dollop cream wont separate. -Washing the butter the second time helps it stay fresh for longer. -Add some oil after the second washing of the butter if you want a softer, more spreadable butter -Add some herbs or garlic after that second wash to give your butter more flavour, it can then be frozen for use at anytime Hope you all give it a go! 07.01.2022 It was Vegetable Stock Paste night in my house tonight! Im finally coming to the end of the Chicken Stock & Vegetable Stock I made 3 months ago, so I decided to whack all the ingredients in the Thermi while I was cleaning up the kitchen and by the time I was finished, so was the Stock! Cant wait to start cooking with this batch and see how different the flavour is! This stock is so versatile, you can use any herbs & veggies you have around as long as you stick to the same... quantities to salt ratio. This batch I had: 1/16 cabbage, 2 tomatoes, 2 zucchinis, 2 carrots, 2 small onions, 3 garlic cloves, 1 bay leaf, sage, thyme, oregano, basil, rosemary & parsley! So packed full of flavour and completely additive free- definitely the kind of stock & flavour I want in my dinners!

She is always so proud of herself for cooking the food and is more than happy to eat a risotto full of vegetables! Plus I get leftovers for lunch at work! 05.01.2022 Today was my daughters 8th birthday! Still cant believe its been 8 years. Ive always tried to make her a cake, I like making them and love being able to give her a homemade cake! This year, she asked for my Family Famous- Lemon Cheesecake! Normally, it takes a bit of time to make using my stand mixer, but with Thermi by my side, it was done super fast! -Luckily as Ive come down with a cold and was not in the mood to spend lots of time making a cake!

02.01.2022 One of my favourite features of Cookidoo (aside from it guiding me every step of the cooking journey) is the ability to create your menu for the week ahead & adding it to a shopping list! You can either sort it by category OR by recipe PLUS you can add anything else you need to the list! You can easily tick the box for items you already have and tick them as your shopping so you dont miss a thing!! The only thing its missing, is to send the list to the shop and deliver it to my house!!

01.01.2022 Getting creative in ISO this weekend! I made my own potato sprinkle to go with my slow cooked port ribs! All I used was: fresh Parmesan, rosemary, garlic, salt and drizzled oil on the potato’s while I was coating them! All done in 18 seconds!!! ... Can’t wait to eat these with dinner tonight!
