20.01.2022 Bun Rieu - Pork, tomatoe and crab roe noodle soup! I am struggling to describe the flavours, I would say it’s very funky and pundent with sweet and sour notes from tomatoes and tamarind and certainly funky from the shrimp paste. Then you have the sweetness and richness of the pork stock which is the true hero of the dish. The shrimp oil lingers in the background and carries the subtle hits of garlic, tomatoes, and roasted shallots. Mix of mint, fish mint and lemon balm brings... freshness and vibrancy. It’s just yum! End note: I wish I had my camera to share a photo of my children’s faces as I opened a fresh jar of shrimp paste. Ah! The shrieks of protests . However, I am pleased to report the soup made special mention in all their gratitude journals tonight. I am grateful for small moments of joy and laughter x
