23.01.2022 2020... first our country caught fire, then a plague ravished the population of the world, there’s been riots and protests for racism and I’ve just read a disturbing headline about some kind of carnivorous rats!? . . To the fellow people of the world, stay strong, attempt (as difficult as it may feel) to remain optimistic, continue to work towards achieving your goals and seek to remain inspired by the things that bring you joy. When 2020 ends (and it will) and a new reality... bestows us, we will remember a year over which we had no control, where there was tragedy and uncertainty, isolation and devastation. Where communities rallied and families re-evaluated priorities. While some lives changed direction, others screeched to a stop. Livelihoods were disenfranchised and lifestyles were transformed. We will remember 2020 as the year that was, as we’re reminded that although we have been through a lot, some of the best days of our lives are still yet to come #hope See more

16.01.2022 The BEST Thermomix Banana Bread . . INGREDIENTS - 2 large bananas (mashed)... - 125g melted butter - 2 tbsp milk - 2 eggs - 1.5 cups plain flour - 2 tsp baking powder - 1 cup caster (or brown) sugar - 2 tbsp maple syrup (optional) . . METHOD 1. Preheat oven to 170 degrees. . 2. Place butter into TM bowl and melt by processing for 2 minutes on 100 degrees and speed 2. . 3. Add in banana and process for 10 seconds on speed 4 to mash it all up. . 4. Add in vanilla, milk, eggs and sugar and process for 20 seconds on speed 4. . 5. Scrape down sides of bowl once inbetween mixing. . 6. Add in sifted flour and baking powder and process for 15 secs until combined. You don’t want to overdo it but you do want everything combined. Scrape down sides of bowl once in between as flour may rise up the sides as you add it in. . 7. Pour into a lined loaf tin and bake for about 1 hour - 1 hour and 15 minutes in a 170 degrees oven until a knife comes out clean.

04.01.2022 GOOEY DOUBLE CHOC THERMOMIX BROWNIES . . We're all about balance at the Collective Wellness hub! .... . INGREDIENTS: - 125g butter (chopped) - 350 g brown sugar - 45g cocoa powder - tsp vanilla essence - 2 eggs - 155g self raising flour - 100-200 g white/dark/milk chocolate melts, whatever you prefer, chopped in large pieces. . . METHOD: - Add butter to bowl and melt for 2 minutes/70C @ speed 2.5. - Add brown sugar and combine for 10 seconds @ speed 4. - Scrape down sides and mix for a further 5 seconds @ speed 3. - Add cocoa, vanilla essence, eggs and self raising flour, and mix for 35 seconds @ speed 4. Scrape down sides. - Add chopped chocolate melts and stir through for 30 seconds - Counter-clockwise operation @ speed 2. - Pour mixture into greased or paper lined lamington or large slice tin. - Cook at 170C for 25-30 minutes. . .
