24.01.2022 Time for another nibble. This one's an easy dip and will be popular with all. Remember,our Original Sweet Chilli Relish used here is not at all hot. So indulge! Linda’s Sweet Chilli Guacamole This dip makes a great topper for tacos, nachos, fish ‘n’ chips and baked or roast potatoes.... Makes about 1 cup 1 avocado, mashed 1 spring onion, finely chopped 2 tablespoons chopped coriander leaves 2 tablespoons Linda’s Original Sweet Chilli Relish Lime juice, salt and pepper Corn chips to serve Combine avocado, onion, coriander and relish in a bowl. Season to taste with lime juice, salt and pepper. Serve with corn chips.

I was in Mudgee again last weekend, more for some R and R than for photography, but I did put up my drone a couple of times to get som...e shots of this architecturally interesting town from above. It is certainly much greener than my other visits here earlier in the year and the people were just as friendly too. If you haven't been to Mudgee for a while (or ever), be sure to go there and visit the wineries, sample the great food and experience the hospitality. See more
21.01.2022 With the rain weve seen over the last month, our chilli crop has done very well indeed. Just in time before the Mid Western frosts put an end to this seasons fruit. Fortunately we have an unlimited supply of product, so jump online and keep those orders coming. We really appreciate the extraordinary support everyone has given us during this challenging time. Keep your chin up everyone. This too shall pass.

16.01.2022 Around Mudgee, NSW The first European settlers arrived in Mudgee in 1821, finding good grazing lands on the banks of the Cudgegong River. The name Mudgee is der...ived from the Wiradjuri term Moothi meaning "Nest in the Hills" or "mou-gee" meaning "contented". The village of Mudgee was gazetted in 1838 and within a couple of years, the village had 36 slab dwellings, three hotels, a post office, Anglican church, police lock-up and a couple of stores. There was a gold rush in the district from the 1850s and while no gold was found in Mudgee itself, Mudgee was a centre for the local goldfields, and the town prospered and grew rapidly as a result. Reflecting the importance and prosperity of the town, the Municipality of Mudgee and the surrounding rural Municipality of Cudgegong were both proclaimed in 1860. Many fine buildings were erected, remodelled and enlarged, seemingly with a case of one upmanship between opposing businesses! When the gold rush finished, agriculture became the main industry for the district and these days, that includes a booming wine industry with vineyards lining the hills in the surrounding areas. Mudgee has a rich heritage of well-preserved buildings, in a variety of architectural styles, lining the streets of the town. It is not the sort of town you can just pass through without missing out on so much. I stayed the weekend with my wife, which meant I was able to get up early to take my photos, (mostly) avoiding cars and people in my shots! Then, of course, theres also the winery tours to fit in the schedule :) See more
16.01.2022 Winter is coming... Time to pull together this very simple dish. Lindas Sticky Sweet Chilli Pork Ribs... Marinate ribs in sauce at least 2 hours before cooking. Serves 4 generously 2kg pork rib racks, cut into 2 or 3-rib pieces cup tomato sauce 1/3 cup Lindas Original Sweet Chilli Relish cup soy sauce 1 tablespoon Worcestershire sauce 1. Place rib portions in a plastic food bag. Combine remaining ingredients; pour over ribs. Seal the bag and marinate in the fridge for at least 2 hours or overnight. 2. Preheat oven to 170 fan forced. Arrange ribs on a rack in a baking pan. Add a little water to the pan. Bake ribs for 60-70 minutes, turning and basing occasionally with pan juices, until ribs are cooked and well glazed.

08.01.2022 Well, time for another yummy meal using, this time, our Sweet Chilli Relish with Lime and Ginger. Im thinking a Mudgee chilled white with this dish... Lindas Hot Sweet Chilli Crab If you use Lindas Original Sweet Chilli Relish with Lime & Ginger, you wont need to use the fresh ginger or garlic in this recipe.... Definitely finger food! For cleaning fingers, supply bowls of warm water with floating slices of lemon and provide paper napkins. Serve with cooked rice or Asian noodles and a sprinkle of coriander leaves. Serves 4 6 uncooked blue swimmer crabs (or 1kg unpeeled green king prawns) 2/3 cup Lindas Original Sweet Chilli Relish cup tomato sauce 2 tablespoons soy sauce cup plus 1 tablespoon peanut or vegetable oil 3cm piece peeled fresh ginger, grated 3 cloves garlic, finely chopped 1. To prepare crab, remove hard top shell and rinse off any intestines and fibrous tissue. Cut each crab into four pieces. Pat dry on paper towels. For the sauce, combine relish and sauces, adjusting flavours to taste. 2. Heat a large wok until hot. Add cup oil and when oil is hot, fry crab pieces, a few at a time, turning until cooked on all sides and shells turn red. Remove to a plate. Discard oil; wipe wok clean. 3. Return wok to moderate hat. Add 1 tablespoon fresh oil. Add ginger and garlic and stir-fry until golden. Add sauce mixture, then crab pieces and cook for 2 minutes, turning and stirring until crab is well coated. If sauce is too thick, add a little boiling water. Serve at once.

06.01.2022 OK, fellow isolationistas! Heres the first of your Covid Cooking Challenges. A very easy recipe to start you off. "What?", I hear you say. You really dont have a bottle of my Original Sweet Chilli Relish? Shame on you. Go to our website immediately and buy one. There. Now youre ready to pizza-up. (Of course, youd be mad not to team this meal with a cheeky Mudgee red...) Lindas Sweet Chilli Chicken Pizza... Serves 2-3 1 x 22-23cm diameter purchased pizza base 1/3 cup Lindas Original Sweet Chilli Relish 2 tablespoons slivered red onion or French shallot 1 cup shredded cooked chicken 1/3 cup dry-roasted peanuts 2 balls bocconcini cheese, thinly sliced cup sour cream Coriander leaves to serve Preheat oven to 200C. Place pizza base on a lightly oiled baking tray. Spread relish thinly over base; sprinkle with onion, chicken, peanuts and cheese. Bake until crust is golden and cheese melts. Spoon sour cream over the top and sprinkle with coriander leaves. Season to taste with salt and pepper and serve.
