18.01.2022 Our brain responds to stress in 2 different ways. A positive challenge to seek food and shelter or a danger response to a negative situation e.g. being eaten by a bear. Currently we are experiencing overwhelming stress and fear which is triggering our danger response. For most of us the fact is we are scared but safe. We need to focus on being safe to calm that over active danger response. By focusing on the positives and being grateful for our safety we can come back to a more balanced frame of mind.



16.01.2022 Lemon Curd INGREDIENTS: 1 cup natural sweetener or caster sugar cup lemon juice 4 large eggs... cup coconut oil 1 tablespoon grated lemon zest, for garnish (optional) METHOD: In a medium heavy-bottomed saucepan, whisk together the sweetener, lemon juice, and eggs. Add the coconut oil and place over medium heat. Once the oil is melted, whisk constantly until the mixture thickens and thickly coats the back of a spoon, about 10 minutes. Do not allow the mixture to come to a boil. Pour the mixture through a fine-mesh strainer into a medium bowl. Place the bowl in a larger bowl filled with ice water and whisk occasionally until the curd is completely cool, about 15 minutes. See more

15.01.2022 Hot Fudge Sauce INGREDIENTS: cup full-fat coconut milk 1/3 cup natural sweetener/sugar 60 grams unsweetened chocolate, finely chopped... Seeds scraped from vanilla bean/1 teaspoon vanilla extract Seasonal fruit for serving METHOD: 1. Place the coconut milk, sweetener, and chopped chocolate in a heat-safe bowl set over a pan of simmering water. Heat on low heat while stirring just until the chocolate melts, then remove from the heat. Add the vanilla bean seeds and stir to combine Use immediately for dipping seasonal fruit. See more

09.01.2022 Zoodle Bolognese INGREDIENTS: 2 tablespoons olive oil 500g beef mince 1 onion diced... 2 tablespoons capers 4 cloves of garlic, minced cup chicken stock 1 cups chopped fresh tomatoes 1 tablespoon fresh oregano leaves or teaspoon dried oregano leaves 1/8 teaspoon cayenne pepper teaspoon salt teaspoon ground black pepper 2 medium zucchinis Parsley and Parmesan to serve METHOD: Preheat oven to 120C. Using a spiral slicer, swirl the zucchini onto long, thin, noodle-like strips. Spread out zoodles on a prepared baking tray and bake for 20 minutes. Heat oil in a large skillet over medium heat. Sautee onion, add and brown the beef. Add capers, garlic, stock, tomatoes, oregano, cayenne pepper, salt, and black pepper to the skillet and cook until reduced by half, about 15 minutes. Divide zoodles among four serving bowls and top each bowl with an equal amount of the sauce, parsley and parmesan. See more



07.01.2022 Sautéed Cajun Prawns INGREDIENTS: 500g prawns shelled 2 tablespoons olive oil 1 tablespoon Cajun spice mix... METHOD: In a medium bowl, combine the prawns, oil, and spice mix. Use right away or cover with plastic wrap and marinate in the fridge for up to 24 hours. Heat a large heavy-duty pan to medium-high heat for 2 minutes. Once the pan is hot, coat the pan with a light drizzle of oil and cook the prawns in batches for 2 minutes per side or until golden and cooked through. Do not over-crowd the pan. Serve on tacos, salads, burritos, or rice. Enjoy! See more

04.01.2022 Bacon Cannoli INGREDIENTS: 12 bacon slices 8 large eggs cup mayonnaise... 2 tablespoons Dijon mustard 1 tablespoon chopped fresh dill 1 teaspoon paprika Salt and pepper, to taste Special equipment: 12 Cannoli tubes METHOD: Bacon Shells: Preheat the oven to 190c. Wrap one slice of bacon around each cannoli tube. Wrap the bacon tightly, overlapping the edges so the bacon totally covers the tube. Bake for 20 mins, or until the bacon is crisp. Remove from the oven and allow to cool completely. Carefully wiggle the bacon to release it from the cannoli tubes while keeping its shape. Egg Filling: boil eggs, cool, peel and chop. Combine eggs, mayonnaise, mustard, dill, paprika, and salt and pepper. Mash well with a fork or wooden spoon. Assemble: place the filling in a pastry bag fitted with a tip or a resealable plastic bag with one corner snipped off. Fill each bacon shell, leaving some filling sticking out of each end. Garnish with fresh herbs and drizzle herb dressing, if desired. See more
