25.01.2022 Happy Monday A fresh start with healthy omelette stack mini waffle's with fresh salad, The omelette was simple just two eggs, chedder cheese, salt and pepper. Only took one minute to cook each omelette! Made four pieces in the #minimakerwaffle out of the two egg's, fantastic I thought! I even put the ham in it as well so the ham is flavourful. I stack it with salad, tomato, baby spinach, cheddar cheese, gherkin, rocket leaves and ham and salt & pepper was freshing and tast...y and also lovely and light was a good kick start of the day! 21.01.2022 Hello Everyone, A beautiful Apple cinnamon mixed spice ginger cake, very simple to make with delicious toppings of Ruby Apple pieces on top of the cake thats also Marinated with cinnamon sugar and mix spice after mixing the cake mix the apple toppings just goes on the top of the cake mix just add beautiful texture and sweetness on top of the cake. RECIPE 125Grams of butter ( ROOM TEMPERATURE) 3/4 brown sugar 2 eggs (ROOM TEMPERATURE) 1 teaspoon of cinnamon sugar 1 teaspoon of mixed spice 1/2 teaspoon ginger powder 2 cups self raising flour (sifted) 2/3 cup of milk TOPPING FOR THE CAKE 2 ruby red Apples (peeled, cut in little cubes) 1 teaspoon of cinnamon sugar 1/2 teaspoon of mixed spice (Mix well) . METHOD Butter, sugar, eggs in the mixer till smooth and frothy add cinnamon sugar, spice, ginger and sift the 2 cup's of self raising flour in and mix together and slowly add the milk bit by bit while you mix together till thick and smooth, then put the baking paper on the 25 cm ratangel tin then the cake mix then level it then put the ruby apple cubes on top spread even try and keep away from the sides a bit in oven for 165degrees for 45 to 50minutes. When the cake is cool lightly sprinkle the icing sugar over it. . . 17.01.2022 Hello Everyone, I made some little mini meringues and mind you this is my second try today as yesterday I tried to do them but they turned flat and my mistake was I took them out of the oven because they looked great high and perfect colour but within 5 mins they turned flat, why because I didn't leave them in the oven after they were cooked to let it set. I guess you have days that it doesn't turn out and it just wasn't my day! can you relate? so I got up early tried again!.... It was my second attempt because I had this picture in my head, I wanted to achieve this, it worked and I felt so happy although I'm not a good icing piping bag lady! Yet, I tryed and I guess that's how real life is when you fail do it again and that feeling by achieving is so rewarding feeling we learn by mistakes and everyday is a new day. Here we are this platter has mini meringues with fruit around like Christmas creation with some strawberries, blackberries, blueberries, cherries kewi fruit and salt chocolate petazels and when I was ready to serve this plate I then put some passion fruit over the little meringues and lightly dust the icing sugar over the fruit and some whipping cream aside. It was a lovely platter of joy, healthy and some sweetness of sugar with the cute little meringues. Was beautiful to eat have a wonderful day lisa . RECIPE 1. 3 egg whites (refrigerated) 2. 1/4 teaspoon of cream of tartar powder 3. Pinch of salt 4. 1/2 cup of fine white caster sugar METHOD 3 egg whites in the mixer bowl whipp it up on medium speed, till it change's white and fluffy then add the cream of tartar, salt, whipp it up then slowly add the sugar bit by bit while the mixer is still going then whipp till the mixture looks really thick and doesn't fall of the beat handel when you test it. Then lay the baking paper first on the tray then put the meringue mix in a pipe bag and make small mini cup cake size and separate it a little from one another. In the oven on 165degrees for 15mins till the meringues look slightly golden and when you turn off the oven when its ready leave them in for at least 10mins before take them out. . . RECIPE 1/2 teaspoon of sesame seed oil 6 chicken thighs in pieces 2 garlic chopped 2 pieces of crystallised ginger 1 tablespoon of soy sauce 2 tablespoon of sweet chilli ginger and soy (KIKKOMAN) brand 1 1/2 teaspoon of sesame seeds . METHOD 1.Heat up pan with sesame seed oil on medium heat. . 2. 01.01.2022 Hello Everyone, Was in the mood to cook a Roasted Thai chicken with yellow laksa paste with little olive oil mix together with some Thai seasoning, dry kaffir lime leaves, garlic, fresh crushed lemon grass that was spread onto the top of the chicken with some fresh cut lime pieces and as a side with some roasted hazzel backs potatoes done with garlic salt and olive oil, carrots with maple syrup, small baby onions, roasted garlic, roasted red pepper's all baked in the oven. I... also grilled some Pineapple sticks to go with this menu I really enjoyed this menu was quite spicy from the chicken and some sweetness from the Pineapple sticks and was delicious comfort meal to eat.
