25.01.2022 Carcinogen Alert! Don’t keep potatoes in the fridge - it will increase levels of something called Acrylamide in the potato. When cooked at a high temperature this chemical can become carcinogenic. Carcinogens are known to cause cancer. That doesn’t mean you should avoid potatoes just keep them in the pantry.
25.01.2022 Day 6 brings us to the little arty town of Vila Nova de Cerveira it is on the river and very serene . We are staying in a house with a very cute elderly lady who does not speak a word of English. She is washing our clothes (I think) and making us breakfast .

24.01.2022 Have you finished your Christmas Day menu? How about this ..... Cold Noodle Salad with Tahini Dressing 200 grams Buckwheat Soba Noodles... 1/4 cup Tahini 1/4 cup Extra Virgin Olive Oil 2 Lime (juiced) 2 tbsps Tamari 1 1/3 tbsps Sesame Oil 1 tbsp Maple Syrup 1/3 cup Water 1/2 cup Radishes (thinly sliced), 2 Carrot (medium, thinly sliced into ribbons) 1/2 cup Mint Leaves (finely chopped) 1 cup Chickpeas (cooked, from the can) Make the noodles according to the directions on the package, drain and rinse with cold water. Return to the pot (but don't heat). Combine the tahini, olive oil, lime juice, tamari, sesame oil, maple syrup and water in a jar. Mix very well to combine until smooth. Add extra water, one tablespoon at a time if needed to thin the sauce. Add the sauce to the noodles and toss to coat. Add the radishes, carrot, mint, and chickpeas to the noodles and toss to mix. Divide into bowls and enjoy!

22.01.2022 Warning!! The following recipe is full of calories, is not vegan friendly and it will be hard to stop at a small slice. This is a Burnt Basque Cheesecake, If you want a little history behind it read below, the full recipe link is in my Bio. Although the name makes it sound like it has a long history, Basque Cheesecake was created in 1990 by chef Santiago Rivera of La Viña in San Sebastian, Spain. ... Is the cheesecake really burnt on top? The Basque Cheesecake is burnt, but it is not cooked so long that the top turns to carbon. There are two non-enzymatic browning reactions happening here. The first is the caramelization of the sugar, which creates aromatic compounds such as Diacetyl and Maltol, which give the top the flavor of caramel. The second is Maillard browning, which is a reaction between the proteins in the cream cheese and sugars, which not only creates additional flavor compounds; it also creates the taste of umami. This is why the seemingly burnt layer on top tastes so good. Happy Cooking!
21.01.2022 Dukkah Crusted Avocado or dukkah crusted anything really. This recipe is great eating with bread and olive oil, or used as a coating on fish or meat. I used my coffee grinder to blend the ingredients, just be careful not to overdo it otherwise it will become too powdery. Nut allergy? No problem, see below for 2 recipe options, with and without nuts. Dukkah... 1/2 cup Hazelnuts (roasted, unsalted) 1/3 cup Almonds (roasted, unsalted) 2 tbsps Sesame Seeds (white and/or black, toasted) 2 tbsps Coriander Seed 1 tsp Fennel Seed 1 tsp Cumin (ground) Sea Salt & Black Pepper (to taste) Nut-free Dukkah 1 cup Sunflower Seeds (roasted) 2 tbsps Sesame Seeds (white and/or black, toasted) 2 tbsps Dried Thyme 1 tsp Fennel Seed 1 tsp Cumin (ground) Sea Salt & Black Pepper (to taste)

15.01.2022 Breaking bread although traditionally a religious term, symbolises the beginning of a shared meal. How often do you share a meal? Are your guests involved in the cooking process? Eating with others provides both social and individual benefits. Studies show that quality of close friendships and family has a significant and direct impact on health, wellbeing and even survival. Aside from the obvious mental health impacts, there is evidence that endorphins tune the immune ...system. Statistics show that Australians have terrible eating habits with 1 in 5 people reporting that they don’t take time out of their day to dedicate to eating an important meal. Studies also show that social eating in European countries involves preparing and cooking meals with friends, while in Australia we tend to prepare the food before guests arrive. So, invite your friends over and put them to work! Talking about ingredients, methods, flavours, discussing where you purchased your food and sharing cooking tips are all enjoyable part of the meal experience.
14.01.2022 What do these foods have in common? Avocado, soy sauce, legumes, citrus, bananas, bone broth, kombucha, kefir, aged cheeses, smoked meats. They are all high in histamine and are often dietary staples at this time of year. Some people have trouble metabolising histamine and this can result in an array of symptoms including lethargy, digestive problems, throat irritation, even menstrual irregularities.... 14.01.2022 IN SEASON: Custard Apples We’re nearing the end of the custard apple season so if you haven’t added these to your diet already, grab some while you still can. With a bunch of vitamins including C to boost immunity, A for healthy skin, and B6 to help regulate your mood, custard apples not only taste great, they provide multiple health benefits.... These tropical fruits have a creamy, sweet flesh and are high in magnesium and potassium that helps keep your blood pressure in check and prevent heart disease. They are full of antioxidants to help fight inflammation and free radicals that have been linked to chronic illness including cancer. Custard apples are also a source of lutein to promote eye health and fibre to help with digestion. Add them to your smoothies or simply spoon them out of the skin for a health-boosting, sweet kick.

12.01.2022 Sweet doesn't need to mean unhealthy. There are plenty of foods with naturally-occurring sugars that can give you the fix you're after, without the unwanted side-affects. This delicious Chocolate Berry Vegan Tart is a great example containing almond meal for additional protein, cacao for magnesium and lots of yummy berries for vitamin C and fibre! And it is quick and easy to make, try my fail-safe recipe. For the crust... 2 cups (200g) almond flour cup (21g) unsweetened cacao powder cup (50g) coconut oil, melted 2 tablespoons pure maple syrup Pinch of salt For the filling cup (114g) canned full-fat coconut milk 6 oz. (170g) dark vegan chocolate, finely chopped cup (80g) jam/preserves (no sugar) I used chia/berry jam see my other recipes for this. 2 cups (240g) fresh raspberries or other chosen berries Instructions 1. Lightly grease a 9-inch pan with a removable bottom with coconut oil. 2. In a bowl, combine all of the ingredients for the crust and stir together. Press evenly into the prepared tart pan; bake in oven on 350 deg F, for 12 minutes. This tart shell can be alternatively left to chill in the fridge to set with no baking. I prefer it baked. 3. Place finely chopped chocolate in a large bowl. In a small saucepan, bring coconut milk just to a boil. Pour hot coconut milk over chocolate and let stand 1 minute, then stir until smooth and creamy. Stir in raspberry preserves. Pour the filling into the prepared crust. 4. Garnish the top with berries. 5. Place tart in the refrigerator to set and cool completely, about 1-2 hours. Slice and serve. 6. Store all leftovers in an airtight container in the refrigerator.
11.01.2022 Day 12/13 found us in Padrón a beautiful little town 1 stop before Santiago. We had a break day here and of all things decided to go for a walk in the country side We went to a beautiful convent and church in Herbon
11.01.2022 Santiago!!!! We made it! I would definitely recommend this walk to anyone. We have seen all ages of people and even some that are physically challenged. Such a great experience to clear the mind because I could honestly think of nothing all day except food, water (ok and wine) and where my bed was going to be. Looking forward to my next Camino! 11.01.2022 Turn up the spice! Winter is the perfect time to up your spice intake as it lends itself to exotic curries and steaming soups. Spices like cardamom, sumac, cumin and cinnamon are fantastic for cancer prevention thanks to their unique phytochemicals that have antioxidant and anti-tumour properties. Spices are also very beneficial to the immune system as they contain antimicrobial and antibacterial phytochemicals.... Fry them in the pan with some garlic, ginger, chilli and onion as the base of curries and soups. Breathe in the aromatics before slurping down their medicinal benefits to boost your immunity and increase your antioxidant levels through these cold months.
11.01.2022 The debate over whether breakfast is the most important meal of the day, or should be skipped altogether, continues to play out in mainstream and social mediabut not in my house. We start every day with a wholesome breakfast - the contents of which varies depending on our individual needs. I wake up early so I usually make myself steel cut oats with cinnamon, honey and almond milk that I’ve soaked the night before.... My husband is not much of a breakfast person so he opts for a handful of mixed roasted nuts, a banana and yoghurt. My daughters are always in a rush so it’s a smoothie with banana, almond milk, peanut butter, chia seeds and honey or sourdough with almond paste, banana and chia. There are so many healthy breakfast options. The debate should not be about whether to eat breakfast or not; it should be about what breakfast is right for you.
11.01.2022 IN SEASON: Purple Carrots All carrots are nutritious but purple ones have particular benefits found only in fruits and vegetables of the same vibrant colour. Just as easy to grow and cook as orange carrots, the purple variety are full of fibre and potassium but are also rich in powerful antioxidants known to fight inflammation and may protect against certain health conditions such as heart disease.... You can usually find purple carrots at your local farmers markets but may even see them in a supermarket from time-to-time. I highly recommend grabbing or growing some! Not only do they look gorgeous on your plate, they are easy to include in your diet and will do wonders for your overall health.

09.01.2022 BLOG: This month we look into the little known, but not uncommon condition known as SIBO small intestinal bacteria overgrowth. Some studies show up to 15% of the population suffers from SIBO without knowing it; and SIBO is present in up to 80% of people with irritable bowel syndrome (IBS). SIBO can be a complicated condition that requires finding and treating the cause, as well as rebalancing the bacteria in the small intestine. ... 08.01.2022 Beetroot Balsamic Dip for a bit of Christmas Colour! Recipe below Ingredients 4 Beetroot (medium, peeled, cut into small cubes) 1 Brown Onion (sliced)... 2 Garlic (cloves, peeled) 1/2 tsp Sea Salt (divided) 1/4 cup Extra Virgin Olive Oil (divided) 1/4 cup Water 1 1/2 tbsps Balsamic Vinegar 2 tbsps Parsley (optional, chopped) Method 1. Preheat the oven to 400oF (204oC). Cut a large piece of foil or parchment paper. 2. Place the beet, onion and garlic in the center of the foil or parchment and season with half of the salt and half of the oil. Wrap tightly and transfer to a baking sheet. Bake for 40 to 45 minutes or until the beets are tender. Let cool slightly. 3. Transfer the cooked beets, onions, garlic and all the juices to a blender along with the water, balsamic vinegar, remaining salt and remaining oil. Blend until smooth and silky. 4. Serve chilled and garnish with parsley, if using. Enjoy!

This is one of my favourite combos- I promise you cannot taste the zucchini x 1 1/4 cups Unsweetened Almond Milk... 1 cup Frozen Strawberries 1 Kiwi (peeled, chopped) 1/4 cup Pineapple (fresh or frozen) small/medium Zucchini (chopped) 1 tbsp Chia Seeds 2 tbsps Vanilla Protein Powder ( or 1 tbspn nut paste or tahini) Blend all of the above. If using fresh strawberries add some extra ice cubes.
