25.01.2022 Moroccan Chicken Bake When I make something that is really good, I have gotten into the habit of writing it into a handwritten recipe book. I love it because its my go to for all the good things I have ever made. This recipe is especially great for when you are having friends over, or youre busy doing something with the kids because it bakes away whilst you are socialising or helping with homework! ... Moroccan Chicken Bake Ingredients 2 tsp olive oil 3 tsp Moroccan seasoning 8 small chicken thigh fillets 1 large red onion, halved and thinly sliced 1 red capsicum, thinly sliced 1 yellow capsicum, thinly sliced 3 garlic cloves, crushed 3cm piece ginger, peeled and grated 3 x 6cm pieces lemon rind 1 cinnamon stick 1 long fresh chilli, seeds removed, thinly sliced 1 tsp mild paprika 3 ripe tomatoes, coarsely chopped 185ml chicken stock 400g can chick peas, drained 2 Tablespoons honey METHOD 1. Preheat oven to 175C. Heat the oil in a frypan over medium heat. 2. Sprinkle 2 teaspoons of the Moroccan seasoning over the chicken, then cook in 2 batches, for 3-4 minutes each. Transfer to a casserole dish. 3. Reduce heat to medium. Cook onion and capsicum stirring for 5 minutes or until soft. 4. Add garlic, ginger, lemon rind, cinnamon, chilli, paprika and remaining seasoning. Stir for 2 minutes or until aromatic. 5. Stir in tomatoes for 3 -4 minutes or until soft. Add the stock and bring to the boil. 6. Pour over the chicken and bake in the oven for 35 minutes with the lid on. 7. Uncover, remove the cinnamon stick then stir in the chick peas and honey. Bake for another 20 minutes or until tender and sauce thickens. Season to taste. 8. Serve with steamed broccolini and sweet potato mash. TIPS Thicken with a cornflour slurry if you want the sauce to be thicker towards the end. I always adjust the seasoning to taste towards the end and sometimes I add a bit more honey if needed too...because honey is good...right!

22.01.2022 You know how if you let a swear bomb loose when you were a kid you got the old "Ill wash your mouth out with soap" response. Well I think Mum might have been able to convince me if soap had of looked like this when I was growing up! Isnt it pretty its one of the soaps from my new Natural Soap Making Online Course which is due to be released by the end of this month. I cant wait! So much work has gone into making this course come to life and Im really excited to see it become a reality.

Its lovely served as is, but can easily be made into a dessert by heating slightly and serving with ice cream or custard. 19.01.2022 The Best Scone Recipe Ever! My friend Chris gave me this recipe, and it never fails and best of all...its easy! Chris can whip up anything at the drop of a hat. The best person to know when its cold outside and you just want a little bit of something with a cuppa.... I used to make my scones using the cream & lemonade recipe, and although Im sure that recipe has probably been around for a long time, I find that I can whip these up a lot easier as I dont usually have lemonade on hand. 18.01.2022 Its lemon & lime season, and what do you do when you have so many you dont know what do do with them...you pucker up and break out this go to recipe & get baking. Tangy Lemon or Lime Bickies Ingredients. 60g butter... 2 tsp grated lemon or lime zest 1 cups self-raising flour 1 egg yolk cup castor sugar 1 Tablespoon of lemon or lime juice Method. 1. Beat butter, rind, sugar and egg yolk in a small bowl with an electric mixer until light and fluffy. 2. Stir in sifted flour and enough juice to make ingredients cling together. 3. Turn dough onto a lightly floured surface and knead gently until smooth. 4. Roll rounded teaspoons of mixture into balls, place onto a greased oven tray allowing 4cm between each. Flatten slightly. 5. Bake in a moderate oven for about 15 minutes or until the base is lightly browned. (Dont wait until they are brown on top as they will be overcooked) 7. To ice bickies - once cooled, mix enough lime juice into approx 1 cup of icing sugar until you have a smooth thick consistency and place a dollop on top of each bickie. Sooo easy & sooo good....enjoy! See more

13.01.2022 Im back! I hope you are all well and looking after yourselves, especially my Melbourne friends. Im really feeling for you all at the moment. After a much needed month long break from social media, I am rockn and ready to go again. Its amazing how much time social media can take away from your day if you let it. Strangely, I was starting to feel overwhelmed, feeling like I had to post everyday so that facebook and instagrams algorithms liked my pages would keep ticking ...over. But at the end of the day, that is all B.S.and I pulled the pin for a while so I could clear my mind, re-focus and get back on track with my longer term goals. I have still been busy though, filming my online soap, sourdough and cheese making classes. Its taking a lot longer than I expected but its going to be a great way for you to learn at your own pace together with lots of supportive resources so you can achieve whatever it is you might like to turn your hand at. I cant wait to release them, and Ive given myself a deadline of 30th of September to have the soap making class ticked off and the others to follow closely before the end of 2020. Full of beetroot & leeks with some little smiling faces popping up to keep them company I have a day of renovating and then tomorrow a walk around the flower bowl at Camden Head tomorrow. 07.01.2022 This slice, well lets just say, its not one for the diet conscious, but oh my...if you have friends or family coming over this weekend and you need an easy morning tea slice that everyone will love, this is it. Deliciously chocolatey & pecany. If you want to serve it for dessert, then warm it slightly for around 5 - 10 seconds in the microwave and serve with vanilla ice-cream...you know, just incase it wasnt enough on its own. Pecan & Chocolate Bars... Ingredients Base 1 cups self-raising flour cup brown sugar cup melted butter 1 cup choc chips Topping 3 eggs, lightly beaten 2/3 cup brown sugar 50g butter, melted cup golden syrup 1tsp vanilla 200g pecans Method Preheat your oven to 180 C, grease and line a lamington tin. BASE - Place flour into a large bowl. Add sugar and mix to combine. Add butter and mix well. Fold in chocolate chips and press into the lined tin. Refrigerate for 20 minutes. Transfer to oven and bake for 20 minutes or until lightly browned. Allow to cool. TOPPING Combine eggs, sugar, butter, golden syrup and vanilla in a bowl. Mix well. Roughly chop half the pecans and stir into the mixture. Pour the topping over the cooled base and scatter over the remaining pecans. Bake for 30 40 minutes or until the topping has set. If the nuts start to brown too quickly, cover the tray with foil and continue to bake. Cool in the tin then slice into bars. Store in an airtight container in the fridge for up to 3 days.

06.01.2022 I think Ive stumbled on a gardening hack I planted 3 broccoli plants in front of my snow pea trellis. I never got around to covering them with vegie netting to stop white cabbage moths from laying eggs on them....but...check this out! My broccoli plants are still pest free ... This might be an old theory but Im thinking that the white snow pea flowers have deterred them...what do you think?

04.01.2022 Who doesnt love a good pie? And even better...a pretty one! Ive used some cake decorating tools here to cut out the decorations which is cheating a bit I spose, but use why wouldnt you! If youre ready to get creative, here is my go to shortcrust pastry recipe. I found it in a trusty CWA cookbook years ago...those ladies sure do know their way around the kitchen. INGREDIENTS 125g Butter (cold)... 1 cup Self Raising Flour 1 cup Plain Flour 1 tsp Lemon Juice or Vinegar 2 Tablespoons Caster Sugar Ice Cold Water METHOD 1. Combine flours then rub butter into flours until it looks like fine bread crumbs. I use a processor...too impatient! 2. Add lemon juice or vinegar and enough water to make a soft dough. 3. Divide into 2 then roll each ball out, between sheets of baking paper, into circles big enough to fit your pie dish. 4. Line your pie dish, fill, then have fun decorating. NOTES * The lemon juice or vinegar are key to getting a short crust. * Only use chilled butter and water. This helps to keep the butter content from melting. * If you rub the butter in by hand, make sure you only use your fingertips...your palms get too hot for this job.

03.01.2022 Gluten Free Peanut Butter Bickies. This is an old recipe of mine, and those who have made it in the past told me they thought they were the BEST EVER gluten free peanut butter bickies they had ever tried! Even better than ones with wheat flour. ... Really I hear you say? Yep...really! Ingredients 1 cup peanut butter (must be spreadable but not runny) If the peanut butter isnt salted, add a couple of pinches cup brown sugar 1 egg 1 tsp vanilla extract 1 tsp bicarb METHOD 1. Preheat oven to 180 degrees C. 2. Combine ingredients and drop by teaspoon amounts on baking tray. Press down with a fork. Bake for 8 minutes. Let cool. EAT - BE HAPPY - REPEAT

02.01.2022 You may not know this, but I used to run a cake decorating business many years ago. I really loved it, but sadly it didnt pay the bills, especially considering the time that went into them. Wedding cakes were always my favourite cakes to make. Everybody always had such different tastes and I loved the challenge. My only criteria was the cake had to be pretty! ... If they showed me a picture of a cake they wanted that I thought was ugly, I was always booked out!

01.01.2022 I wonder where the saying "under the weather" came from? Anyone know? Whatever it means...Im under it The hubby and I went away last week to the south coast NSW and after 3 days, I was done for.... Dont worry though, its not Covid. 6 hours waiting in a carpark to be tested took care of that 10 days later and Im still a sorry sight, but I think Im coming out the other side now. So for now I will sip my lemon, ginger & honey tea and hope for a full recovery...tomorrow would be nice
