We are settling in for some beer and pizza after a day of wet festivities at the Botanic Gardens. . . 24.01.2022 We are slowly recovering today from a mammoth day yesterday. 1200 cupcakes all boxed and delivered for @auspost. Just when we thought we were done, there were all our normal daily orders to be done. 15 hours total and to say we are sore is an understatement. 17.01.2022 1200 individually boxed cupcakes takes a lot of planning to execute. It takes days of preparation and 12 hours to go from baking to boxing. . We use a count down schedule to make sure that we stay on track. Two weeks prior to delivery, we roll out, cut and dry our gumpaste toppers. They take up to 3 days to dry. ... . One week out from delivery day, we make our dry mix. We create our own dry mixes in house which makes mixing our cakes easier and quicker on the day. Think of the cake mixes you buy in the supermarket. . Two days out, we print all our toppers and apply them to their gumpaste toppers. . One day out, we mix up our icing ready to be used. . On the day, we hit the ground running. We start with the patty cases, fill them, bake them and cool them. We put together the boxes (all 1200 of them!!) and put a cupcake in each box. Each cupcake is iced inside its box and then a topper placed on top. The boxes are closed and then the best part of the day is placing them into larger boxes for delivery. . It takes a team and a lot of time but the result is well worth it.
