18.01.2022 One of the last days of the year in the cellar. Getting Chardonnay, Pinot Noir, and Syrah ready for bottling. There is a bit of bonus juice around so I may even be blending up a very very limited run of Light Red :) The big winemaking decision to make is how much sulfur to add. There is a few things to consider when adding sulfur. First, the history of the wine - none of the wines have had any sulfur added yet.... Second, the flavour of the wine and whether sulfur would help - sulfur can change the flavour of wines a bunch, particularly if they are aldehydic. This year's Chardonnay is a little aldehydic but I quite like that character. The other wines won't change much by adding any. Last, how the wine will be stored/served/aged - sulfur is great at preserving and helping to stabilise wines. However, if I can trust my customers to store and serve the wine how I intended I don't need to add any or just very little. I've got a few days to make the choice and I may follow up with another post about my decisions. Until then, flick me a comment if you have any questions :)
