16.01.2022 RECIPE OF THE DAY! Buckwheat & Broccoli Pasta One of my favourites! First, because it’s pasta & green, and two, because it’s fibre-packed buckwheat and gluten free INGREDIENTS:... - 1 Bunch of broccolini or 1 broccoli - Buckwheat Pasta - 1 small Red Chilli - 1 clove of Garlic - Olive oil, Rock salt & Pepper - Italian herbs (optional) - Parmesan (optional) - Few Walnuts (mandatory!! Except if you're allergic of course..) Cook the pasta as usual. While pasta cooking, Splash some olive oil (or vegan butter) into a pan at medium heat and add the crushed garlic & chopped red chilli. Toss and turn until golden, not burned... Chop the broccoli in small bits and cook for 5 mins. You want the broccoli to remain a tat crunchy and still a lush green - that's when they offer you the most of their nutrients. Add the chopped walnuts and the italian herbs. Cook for another 3 mins. When pasta is cooked, grab some tongues and pour them into the hot pan with the preparation. You can bring over some of the pasta water in the process but not too much otherwise it will turn all soggy... If necessary, add another splash of olive oil (just one we said). Season with rock salt & cracked pepper.
