08.01.2022 Ok my friends, the one one you’ve all been waiting for! I’d love to hear how it goes for you & super excited if you shared a photo of your final product. Peanut Caramel Clusters... (Healthy Snickers) 1 cup medjool dates, pitted 2 heaped TBSP peanut butter 1 TBSP Maple Syrup 2 TBS Lucuma tsp Sea Salt 2 tsp vanilla extract cup filtered water (or as needed) 1 cup Peanuts, rough chopped 100g raw dark chocolate 1 TBSP Coconut oil Combine all ingredients (except nuts chocolate & oil) in a blender until smooth Use half the water then add a little as required. It is best as a thick caramel Taste and add a little more salt or maple to your taste Put caramel and chopped peanuts in a bowl and mix well Drop heaped teaspoons onto a lined tray and freeze until firm and very chilled Melt the chocolate and coconut oil in a double boiler (I use a pyrex jug in a pan of boiling water) Ensure your caramels are firm then dip each one in the chocolate (use a fork to allow the excess to drip off) and put back on tray Once all have been dipped, put back in the freezer for about 10 minutes until chocolate is set I find they are best kept in the freezer Makes about 30 or 40 smaller bite size WARNING: try not to eat them all at once, even though they are healthy moderation is key TIPS: Lucuma is not essential but it gives the real hit of caramel. You could use Mequite for a similar flavour or Maca for a more malt flavour.None of these are essential but I like the body they give the caramel and added nutritional content The thicker you can leave your caramel the firmer the final product will be, so go easy on the water Any version of a thermomix is fantastic or a high speed blender You can substitute for a different nut butter and/or nuts If you want to ensure it ‘ a raw product, use raw peanuts - I find roasted gives a little better texture . . . . . . #littegreenheart #plantpowered #wholefood #naturenurtures #myfarmacy #nourish #consciouseating #madewithlove #sunshinecoast #wholefood #guthealth #love #happytummy #sharingiscaring #healthybodyhealthymind #whatareyouthankfulfor #empoweredlife
