17.01.2022 Lacto Fermented Shiitake X Koji - what will happen?? A collaborative experiment that will hopefully come out with amazing result!! #Repost @analiesegregory... Shiitake brine left over from a lacto ferment being turned into a mushroom shio Koji, fingers crossed it’s good! It already has an aroma of truffle which is really interesting! This is a combined project with @littleislemushrooms to help generate new mushroom based products for a retail range for them.
