24.01.2022 PLANT BASED SHEPHERD’S PIE - SAVE THIS RECIPE Comforting soul food right here! This recipe is hearty, satisfying, filling and loaded with plant based goodness. PLANT BASED SHEPHERD’S PIE... 1 tbsp extra virgin olive oil 1 medium brown onion, diced 2 cloves garlic, minced 2 heaped tbsp tomato paste 2 heaped tbsp good quality BBQ sauce (or extra tomato paste) 100g @flexiblefoodsau plant mince 500ml stock/ broth 1 cup frozen mixed veggies #healthynothard! 1 sprig fresh thyme & rosemary 1 cup mashed potatoes Sea salt and pepper Extra virgin olive oil In a deep frying pan heat oil and add onion and garlic. Sauté for 1-2 minutes or until softened. Add tomato paste and bbq sauce and stir through. Add Flexible Foods plant mince and stock. Cover and cook for 4 mins, stirring occasionally. Add veggies and herbs and cook uncovered until sauce has thickened and veggies softened. Mix mashed potato with sea salt, pepper and a generous drizzle of extra virgin olive oil. Transfer to a pie dish and top with mashed potato. Drizzle over extra virgin olive oil. Bake in pre-heated oven until golden on top. For the plant based mince I use @flexiblefoodsau range - its free from nasties, no preservatives or unrecognisable ingredients or weird stuff! It’s simply made from pea protein, herbs and spices. Simply prepare the burger filling ingredients and create a colourful spread of goodness for everyone to build their own burger, their way.... These spiced quinoa, pumpkin and chickpea burger patties are super delicious and packed full of nutrition including protein and fibre. The secret to a good burger patty is always in the spice! I’ve shared my secret, easy burger spice mix below using the @mccormick_aus organic spice range. These are certified organic and you can find them in the herb & spice range in Woolies. I love their transparency of the origin, harvest dates and their commitment to providing these certified organic so you know you are getting amazing quality for taste and for health. Recipe: Spiced Quinoa, Pumpkin & Chickpea Burger Patties: 1 1/4 cups cooked quinoa 1 cup canned chickpeas, drained 3/4 cup roasted pumpkin puree 2 eggs 1 tsp @mccormick_aus Organic Cumin 1/2 tsp @mccormick_aus Organic Paprika 1/2 tsp @mccormick_aus Organic Garlic Powder Pinch @mccormick_aus Organic Chilli Flakes 2 tsp coconut flour Sea salt & pepper Extra virgin olive oil Avocado Aioli 1 x avocado Juice of 1 lime 1 tsp @mccormick_aus organic garlic powder Pinch @mccormick_aus organic chilli flakes Sea salt & pepper Burger buns of choice Your favourite burger bun fillings Method: In a mixing bowl roughly mash chickpeas with pumpkin. Mix in whisked eggs and quinoa. Add spices, coconut flour, salt and pepper. Spoon heaped tablespoon portions onto a heated and well oiled frying pan. Using the back of a spoon to shape into patties. Cook for 2-3 minutes each side. Gently flip when turning over. (You can also pulse all ingredients in a food processor to combine). To make aioli, mash avocado and mix with lime, garlic, chilli flakes, salt and pepper. Enjoy! 19.01.2022 10 MIN EASY CURRY MINCE with COCONUT CAULI RICE - Plant Based, GF, DF A quick and easy dish for when you need something tasty and healthy without fuss. CURRY MINCE ... Sauté 1 red capsicum diced and1/2 brown onion diced in extra virgin oil. Add Flexible Foods plant-based mince (Taste of India - has all the spices already included) + 400ml water to frying pan and cook over low heat until soft. Can add flavour boosters such as coconut cream and/ or tomato paste or crushed tomatoes. Stir through frozen peas and remove from heat. COCONUT CAULIFLOWER RICE Sauté 1/4 grated cauliflower in coconut oil with 250ml coconut milk + 1/4 cup water until just tender. Can add flavour boosters such as cardamon pods. TO SERVE Serve with fresh herbs such as coriander or flat leaf parsley, lime wedge and my favourite a dollop of unsweetened Greek style coconut yoghurt. I’ve been keeping the @flexiblefoodsau plant-based mince in the pantry for quick and easy meals like this one. 18.01.2022 BETTER FOR YOU CURRY PUFFS RECIPE These are a weakness of mine so in true Live Love Nourish style I’m turning an old favourite into a healthier (and gluten free, dairy free) version. You’ll bite into these light puffs of goodness filled with an Indian spiced filling and be blown away by the flavours and how healthy these actually are. Deep fried curry puffs, move over, there’s a new healthier version on the block. Recipe:... Pastry: 1/3 cup almond meal 1/3 cup tapioca flour 210ml full fat canned coconut milk Pinch sea salt Filling: 1/2 small brown onion, finely diced 50g plant based mince (I used @flexiblefoodau India) 200ml water 1/3 cup frozen peas Extra virgin olive oil Whisked egg for egg wash, optional Method: Pre-heat oven to 180C. In a small frying pan, heat extra virgin olive oil and add onion. sauté until softened. Add plant based mince + 200ml water. Heat and stir. Cook for 4 minutes. Add peas to warm through. Set aside. To make pastry mix almond meal with tapioca flour. Add coconut milk and salt, use a fork to whisk to combine until smooth. Heat olive oil in a large frying pan. Spoon tbsp portions of batter onto pan and cook mini crepes over medium heat (not too high) for 3 minutes or until golden underneath. DO NOT flip! Once they hold their shape and golden underneath, transfer to a baking tray lined with baking paper, uncooked side DOWN. Spoon filling mixture onto half of each of the crepes. Be careful not to overfill, enough so you can fold them over. Fold crepe over on the filling and press down around the edges to seal. Brush with egg wash (optional - or brush with olive oil). Bake in oven for 15 minutes or until golden on top and pastry is cooked through. SO GOOD! 17.01.2022 A FUN FACT about me - growing up I LOVED playing tennis! Most days after school was on the court, homework and afternoon tea in the car on the way, so we didn’t miss a game. Weekend matches and tournaments across the state. Memories! Fast forward some 15 years (now I’m feeling old) I picked up a racquet again just for fun. It’s never too late and you’re never too old to have fun! Apparently 15 years older, 2 kids later and the whole adult life thing and I’m not as fast or fit... as I use to be. And that’s ok I’m really enjoying exercising and getting my heart rate up in way that feels fun vs a workout you have to push through. With adding in some higher intensity workouts including tennis and HIIT I’ve also been adding in a natural sports supplement to help me rehydrate after and recover quicker (because mum life doesn’t slow down!). 11.01.2022 EASY WAYS TO IMPROVE YOUR MOTIVATION TO EXERCISE 1 SIMPLIFY YOUR WORKOUT. It has to be achievable & fit your lifestyle. If you’re finding it hard to fit in, exercise smarter not longer with the time you have. Even just 20 mins! Start somewhere. My favourite way to exercise for when motivation is low or time is pressured is a 20 minute power walk to get the good vibes flowing. Do the best you can with what you have. 2 REVIST YOUR GOALS. Are they too big and adding p...ressure? Lighten them up. You’ll be less overwhelmed and exercise without guilt. It will feel so freeing to make smaller steps that feel achievable. 3 EXERCISE TO FEEL GOOD. Adjust your goals towards an intrinsic motive, i.e. FEELING good; more energised, happier & livelier. When you feel good about your workouts you will want to move more. 4 THE BEST EXERCISE is one you enjoy. What works for someone else might not work for you. Find an exercise that YOU enjoy most. 5 DON’T COMPARE your workout to others. Focus on you, your body, what feels good for you, what is the right match for you, right now. 6 WORKOUT WITH A FRIEND. For the most of us, working out with friends, family, co-workers or neighbours can be the support & cheer squad you need. Being accountable to meet up can also help to make it happen! 7 SET UP FOR SUCCESS by put in place simple things that make it easier. Like placing out your activewear the night before. Get up, get dressed & get moving. 8 PURCHASE A NEW WORKOUT KIT. This is surprisingly more motivating than you think. 10.01.2022 4 INGREDIENT FLOURLESS PROTEIN PANCAKES RECIPE - GF DF 5 minutes + 4 ingredients to delicious and healthy pancakes that will keep you fuller for longer thanks to the boost of protein. RECIPE ... 1 large egg 2 tbsp plant based milk (almond/ coconut) 1 medium banana, mashed 3 tbsp good quality protein powder (see tips below) In a mixing bowl whisk egg with milk and banana until combined. Add protein powder and combine well. Spoon onto a greased frying pan and cook for 1-2 minutes each side or until cooked through. Bonus add ins: Add a pinch of cinnamon to help stabilise blood sugar levels and reduce cravings Add 1 tbsp LSA for additional fibre and healthy fats. Add blueberries for bonus antioxidants. PROTEIN POWDER TIPS Choose a GOOD QUALITY protein powder, without fillers, additives or anything artificial. I choose a plant based protein by Botanika Blends. 08.01.2022 BREAKFAST PARFAIT RECIPE Quick, easy and healthy for a satisfying breakfast that will keep you fulled for hours. Do you ever feel hungry an hour after eating breakfast? Try increasing your protein and healthy fats in your breakfast to keep you fuller longer and provide longer lasting energy. This recipe keeps me full for hours. Let me know if you try it. Ingredients:... 3 tbsp chia seeds 1/2 cup canned coconut cream 1/2 cup coconut water 1/2 tsp vanilla extract 1 tbsp maple syrup (optional) 1/2 cup granola 1/2 cup mango or banana puree (I used Super Cubes frozen puree, see below) Coconut yoghurt Seasonal fresh fruit Method: First make chia pudding by combining chia seeds with coconut cream, coconut water, vanilla and maple syrup. Mix well and allow to set for 30 mins. (You can prepare this element in advance. Great to prep overnight for a quick breakfast in the morning). Layer parfait with chia pudding, fruit puree, granola and yoghurt to fill each glass. Finish with granola and fresh seasonal fruit. The Super Cubes frozen fruit puree is so handy to keep in your freezer. Just scoop and serve. 05.01.2022 MEXICAN NOURISH BOWL RECIPE With Spring vibes in the air you’re going to love the fresh flavours in this quick and easy Mexican nourish bowl. The creamy avocado, fresh tomato and zesty lime, bursts of chilli, satisfying black beans and crisp lettuce, accompany the flavourful plant based Mexican mince bursting with Mexican spices. RECIPE: ... 1 cup shredded lettuce 1/2 cup cooked quinoa/ brown rice 1/4 cup black beans 1 serve Mexican plant based mince 1/2 cup cherry tomatoes, chopped 1/4 avocado, diced Fresh lime juice Fresh coriander Chilli flakes Arrange your bowl with lettuce, quinoa/ brown rice, black beans, cherry tomatoes with squeeze of lime juice over top, avocado and Mexican plant-based mince. Finish with fresh lime, coriander and chilli flakes. For the plant-based mince, I used ‘Flexible Foods’ plant protein mince. Simply add the sachet with water over stove and stir for 4 minutes. The plant-based mince is made from pea protein its a great source of protein, fibre and even contains iron. It’s also preservative free, vegan friendly, gluten free and blows my mind how it tastes and looks like mince but with all the plant based goodness. 05.01.2022 RASPBERRY RIPE PROTEIN BARS - SAVE THIS RECIPE! Dark chocolate, raspberries and coconut with a punch of protein and healthy fats to keep you fuller for longer and help keep cravings away. Basically a healthier cherry ripe bar made with good ingredients, dairy free, gluten free and refined sugar free. RASPBERRY RIPE PROTEIN BARS RECIPE ... 1 cup frozen raspberries (semi-defrosted) 1 cup organic desiccated coconut 1/4 cup almond meal 1/4 cup @botanikablends raspberry coconut plant protein - this will make the bars NEXT LEVEL 1 tbsp pure maple syrup 1 tsp liquid coconut oil 100g dark chocolate Blitz all ingredients (except choc) in a blender until combined. Firmly press into shape into a slice tray and freeze for 3 hours or until hard set. Slice into bars, return to freezer whilst preparing chocolate. Melt dark chocolate. Using two forks coat each bar with chocolate and transfer to a lined tray. Return to freezer to set. Store in fridge (soft centre) or freezer (firm centre) until ready to eat. Recipe below includes simple ways to boost protein and healthy fats to keep you fuller longer. Ingredients:... Mango layer 3/4 cup Super Cubes frozen mango puree 1/4 cup coconut yoghurt 1/4 cup coconut milk / almond milk 1 tbsp macadamia nut butter or 2 tbsp raw, unsalted macadamia nuts Strawberry layer 3/4 cup Super Cubes frozen strawberry puree 1/4 cup coconut yoghurt 1/4 cup coconut milk / almond milk 3 tsp chia seeds (white) Method: In a blender combine ingredients for mango layer. Pour into a tall glass jar. Place in freezer whilst you prepare the next layer. Rinse out blender and combine ingredients for strawberry layer. Slightly tilt the serving glass and slowly pour in the strawberry layer close to the edge to fill the the glass jar. Serve as is or to create a pattern use a skewer to push the strawberry flavour down the sides of the glass jar into the mango layer. Top with fresh strawberries and toasted coconut.
