13.01.2022 CHICKEN GREEK(ISH) SALAD Lunch this week is super light, easy & perfect for this hot weather Ps. This salad you can obviously put whatever you want in it, i put in my favourite salad condiments only!!! ... MARINADE What you need: Chicken breast (I used Maryland x 4) Garlic 3-4 cloves diced Italian mixed herbs Oregano Chilli Olive oil (1/4 cup roughly) Touch of either Balsamic vinegar or lemon juice Place all marinade ingredients in a cup and wisk until combined Place chicken in a container and pour marinade over, making sure the chicken is covered Cover and place in the fridge for up to 2 hours When 2 hours is up, you can either bake, grill or fry your chicken!! Whatever you prefer Once cooked, cut the chicken into small bite size pieces SALAD My ingredients: Australian Feta Cucumber Avo Red onion Green olives Ice berg lettuce DRESSING Olive oil Balsamic vinegar Salt & Pepper Toss everything together & ENJOYY SIDE NOTE: I am the worst with measuring what i put in, i love adding herbs and spices as i go. I also go really heavy on them because i love the taste of those different flavours coming through in my cooking (as well as the smell) This recipe is so versatile you can marinate your chicken in whatever you want, or even use lamb! In the salad you can add chickpeas for extra protein, add tomatoes, kalamata olives .... whatever you want Happy cooking & happy experimenting
