04.01.2022 CHOC-TOP MINI CAKES These decedent mini cakes make a great addition to your morning tea. They are as irresistible as they look - the hard bit will be stopping at one. INGREDIENTS (makes 10 mini cakes)... MINI CAKE INGREDIENTS o 1/4 cup oat flour o 1/4 cup coconut flour o 1/4 cup desiccated coconut o 1/4 cup stevia powder o 1/2 tsp baking powder o 1/4 cup melted coconut oil o 2 tbsp sugar free maple flavoured syrup o 1 tsp vanilla essence o 2 eggs o pinch of salt ICING INGREDIENTS o 2 scoops chocolate Delicious Protein powder by Giant Sports o 4-5 tbsp water METHOD Preheat oven to 170c. Using a spoon, mix all mini cake ingredients together in a bowl until well combined. Line a muffins tray (enough to hold 10 mini muffins) with baking paper & divide mixture in muffin tray. Place in oven for 20-25 minutes or until golden brown on top & a skewer comes out clean. Remove & allow to cool. Whilst your mini cakes are cooling, mix icing together in a mug using a spoon (with water). TIP: Mix water in slowly until you reach an icing consistency. Once mini cakes are completely cooled, layer their tops with icing. Enjoy! MACROS (per mini cake) 127 cals / 5.1g protein / 9.4g fat / 5.4g carbs / 6g sugar #NOCHEATSALLOWED
