What have you found most challenging about COVID?... Working with chef Mauro [laughs]. Not knowing week by week when itll go back to normal, but Im having fun learning new skills in different parts of the hotel. 3. Tell us about some of the different roles you've had to undertake during COVID here at the hotel? Ive started working a lot as part of the kitchen team, helping with food preparation is probably the best part, but seeing how it works behind the scenes in a busy service is pretty interesting. 4. 07.01.2022 Our chef Heshans passion for cooking started at a young age. When I was young, workers would come to our family farm to pick the coconuts from our coconut trees, and me and my brothers would help my mother prepare it to sell while she cooked. All parts of the fruit was used, from milk and coconut flakes, and the husks and shells to be made into things like carpet and utensils. They would even use the coconut shell as charcoal to fuel the fires that made all this possible.... In Sri Lanka, some families belong to tea, in the North, and Southern families like my own belonged to the coconut and the coffee. Heshan says, on a farm, all years my life was spent in the kitchen and around food. Watching my mother cook and preparing meals for my family. This is why I became a chef. Growing up in an Italian family Mauro had a love for cooking and food all his life, and in 2015, Mauro gave up a career as a budding architect to move to Australia and pursue his love of cooking. Starting out as a kitchen hand, Mauro has worked his way up to his current position through restaurants such as Bodega in Melbourne. ...
