25.01.2022 New beer drop! First up is the big and bodacious Highly Illogical by @tallboyandmoose On the pale end of the spectrum but carrying some serious weight. It comes with a full but soft body, hits hard with resin, citrus and mango courtesy of Simcoe, Centennial and Cryo CTZ and then finishes dry.... Next up, she may look like your mum on a big night out but the Matriarch NEIPA by @coconspiratorsbeer is much more than meets the eye: a sheep dressed up in lambs clothing, slightly hazy and all foam on top. She’s generous with her perfume like this brew is with aromas of citrus, pineapple and stone fruit thanks to the El Dorado, Mosaic, Citra hops. A fresh, hopped up juicy number that’s full bodied in every sense of the word. In tha fridge now

16.01.2022 Two new reds on the shelf just in time for the weekend! Super excited to introduce and welcome @little_reddie First up the 2019 NEW! Colbinabbin Nebbiolo & Refosco Colbinabbin in its youth - yum yum! Drink something local and light and delicious that's not going to burn a hole in your pocket. The pressings from an early Nebbiolo pick full of phenolics and flavour were fermented in barrique while de-stemmed Nebbiolo and Refosco were fermented individually in stainless. Ea...ch pick brings different elements to the assemblage to make a wine of place. The wine spent a couple of months coming together in stainless steel prior to bottle. Next is the 2017 Single Year Release Bannockburn Shiraz It's a delicate style, still driven by fruit and spice. From the renowned Bannockburn Vineyards, specifically the ’Winery Block’, established in 1990 and grown by Lucas Grigsby with Matt Holmes. The 2017 vintage was interesting with its overall lighter weight, lower sugar levels, healthy acidity and wonderful complexity of flavour and phenolics. 75% of the fruit was fermented de-stemmed with a small layer of whole-bunch placed on the bottom of the stainless steel fermenter, the other 25% was fermented as whole bunches in a small carbonic vessel, untouched for a week and followed by a few days of gentle foot-trod before pressing. Rested in stainless for around one month before going to old, larger size French oak. One of the three barrels received sulphur as it was filled, the others remained without over winter and spring. Racked into tank in late January before being bottled late February 2018.

15.01.2022 Two new amazing wines from our friends @dormilonawines First up, Orenji 2020 Wallcliffe, Margaret River A stunning, balanced Semillon / Sauvignon Blanc. All certified organic fruit, hand-harvested, fermented on skins for six weeks & pressed off to barrel for full malo. Simply racked, a touch of sulphur at bottling to ensure there's no bottle variation or oxidation.... Next is Tinto 2020 Wallcliffe, Margaret River Made in the young nuevo style from organic Shiraz grown in Osmington. Simply harvested in the cool morning light, wild-fermented in open bins then basket-pressed off to tank before sugar completion. Natural malo, racked, blended and bottled. No additions, fining or filtration. Only minimal sulphur. Get in quick

14.01.2022 Hey Fam, just a little update on COVID and what we are required to do under the NSW government and as a duty to our awesome community. We have completed our COVID-19 safety plan which will be under the counter (if anyone wants to have a read, you’re more than welcome). We are registered with the government as COVID safe.... We are required to keep a Contact Tracing Register. To keep things as painless as possible, there will be a QR code at the front counter which you can scan then fill out a little form. We are required to keep records for 28 days, after which they will be deleted. As always, do the 1.5 metre thing, treat everyone with respect and let’s share (seperate cups!) some awesome brews!
