20.01.2022 Time to share an easy nutrient rich dessert Strawberry Coconut Mousse 400ml coconut milk... 250g strawberries 2 TB honey squeeze of lemon juice pinch of salt 1 TB Great Lakes Gelatin 2 pastured egg yolks * Tip half the coconut milk into a saucepan and whisk in the gelatin. Allow to sit for a couple of minutes. * Blend the remaining coconut milk with strawberries, honey, lemon juice and salt. Leave in the blender and set aside. * Turn the stove onto low and gently melt the gelatin/coconut milk blend. It doesn't need to get hot, just warm enough to make it a smooth liquid. * Pour this mix into the blender with the strawberry puree and blend well. * Add the egg yolks and blend gently. * Pour mix into ramekins or serving glasses and refrigerate for at least 2 hours.
